Chicken Breasts in Caper Cream Sauce

This is great! Deceptively impressive. Nobody will know how easy it was. I try not to modify recipes the first time around, but I'm watching my calorie intake, so I used skim evaporated milk instead of the cream. It worked like a dream! I was also a little more generous with the dill and lemon pepper. This is definitely going into my permanent recipe box! A keeper!!

Dorito® Casserole

This is OK. It is fast and easy, and all of the ingredients are usually things I have on hand. Next time, I will add a can if diced tomatoes, and some onion with the ground beef/turkey.

Spaghetti Squash Casserole

Pretty good recipe. I used fresh mushrooms, and I think it needs more sour cream. I also seasoned with salt and pepper, and used garlic and onion croutons. This is a keeper.

Spaghetti Squash I

This was really yummy. We did add salt and pepper. And, we thought of ways to make it easier - we think canned, diced tomatoes would be fine on the off season. Great, yummy recipe!

Greek Potato Stew

I added more kalamatas (I'm a freak about them), the juice and zest of one lemon, more oregano, and feta crumbles at the end. It was sublime!! I don't know what these "too salty" people are talking about?!?!? :)

Chilled Beet Soup

I added extra lemon juice (one whole lemon), onion, salt, lots of pepper and an entire 8 oz container of sour cream (plus extra for garnish), then added ice water until it was the right consistency I made this as a starter for a vegetarian dinner party, and everyone LOVED it. Delicious and simple!! My favorite kind of recipe!!!

Shoepeg Corn Casserole

I made this for Thanksgiving and it was a HIT. I used the bigger can of shoepeg corn, and still it was a little soupy, I'm going to try an extra can of green beans next time. But, this is definitely a new family favorite!!
