Mushroom Soup Without Cream

My husband and I liked this. Just out of curiosity, I cooked and added a mixture of Minnesota wild rice and brown rice ; then, I blended some of the soup. It added a nice creamy earthy touch. I used crimini and shiitake mushrooms. Loved the leeks. Made my own chicken stock. I will definitely try this again. Makes a great hearty soup for cold nights in Minnesota.

Cara's Moroccan Stew

Very yummy soup. The first time I made the stew I used a butternut squash. The second time I used a red Keri squash I got down at my co-op and it was delicious also. I baked the hard winter squash first than after it cooled I peeled and cubed it. I adjust the spices after everything is added to my taste.

Lynn's Fresh Dill Cabbage Borscht

My husband I loved this soup. I though it was a bit on the salty side at first, although, after I added sour cream/plain yogurt it balanced out some. It might be wise to add less salt than adjust to your taste. I left-out the tomatoes and added more fresh dill.

Chicken Wild Rice Soup

Made some changes cause I am not a big cream of mushroom soup person. I made my own chicken broth and added lots of fresh sage and thyme from my garden than strained and left it overnight in the frig. so the chicken fat can be scrapped off the top the next day. Used fresh pressed garlic and cooked it a bit with the caramelized onions. Added three cups or more mushroom and lots more chicken. It was a lot better the next day with a little 1/2 and 1/2 cream.

Italian Sausage Soup

My husband and I loved this soup and it was perfect for Mn winter dinner. Based on reviews and what I had on hand, I made these chances: used a pound of combined hot and mild Italian sausage, extra garlic, potato, cannelloni beans, finely sliced fresh spinach, can of 28 oz of plum tomatoes, orzo noodles and vegetarian no meat chicken and beef bouillon for stock. Curried Lentil and creamed Garbonzo over rice

The best lentil Soup in the world when I used fresh homemade curry. I also used Chicken stock. Home-Made Curry: 2 tablespoons whole cumin seeds, toasted 2 tablespoons whole cardamom seeds, toasted 2 tablespoons whole coriander seeds, toasted 1/4 cup ground turmeric 1 tablespoon dry mustard 1 teaspoon cayenne Directions Place all ingredients in a container with an airtight lid. Shake to combine. Store in a cool dry place for up to 6 months. When ready to use, grind and add to dishes according to taste.

Fresh Southern Peach Cobbler

My husband and I thought this recipe was awesome! I read peoples comments and made a few changes. I cut back on the sugar a lot in the filling and breading to personal taste adding more corn starch, cinnamon plus almond extract but sprinkled the very top with full about of sugar and cinnamon. Made sure I used a 2 quart pan. Used salted butter so I cut salt to 1/4 tsp. Didn't have a lemon so added fresh picked raspberries for tang and added color. Tried both soda and baking powder cause someone suggested it. It was done in my oven in 20 minutes. It was perfect hot out of the oven with vanilla ice cream. As far as the crust I spread it out evenly and with the topping of sugar and cinnamon it was perfect. Boil the fresh peaches 30 to 40 second than cool under running cold water to remove the skin.

Healthy Apple Crisp

I gave it 3 stars because good apples should not be peeled because that is important to eat the skin for good fiber and health; also, way, way too much sugar. If you use a good mix of sweet and sour baking apples very little sugar is needed especially if it is topped with ice cream. Taste test the apple mixture before adding any sugar and lemon juice and cut the sugar in half for the crust. Top with toasted nuts and vanilla ice cream.
