Chicken Wild Rice Soup

Made some changes cause I am not a big cream of mushroom soup person. I made my own chicken broth and added lots of fresh sage and thyme from my garden than strained and left it overnight in the frig. so the chicken fat can be scrapped off the top the next day. Used fresh pressed garlic and cooked it a bit with the caramelized onions. Added three cups or more mushroom and lots more chicken. It was a lot better the next day with a little 1/2 and 1/2 cream.

Chicken Pot Pie IX

My husband and I loved this recipe. I added dried home-grown sage to the chicken broth cause I love it with chicken. I brought it to a boil than let it simmer till done to my likeness. I used fresh chopped snow peas, instead of frozen peas, that I had on hand, and it was delicious. Also I used w/w flour and it was so close to being too dry but it worked. In my oven the local co-op w/w crust just about burned at this temperature and time so I had to adjust.

Lynn's Fresh Dill Cabbage Borscht

My husband I loved this soup. I though it was a bit on the salty side at first, although, after I added sour cream/plain yogurt it balanced out some. It might be wise to add less salt than adjust to your taste. I left-out the tomatoes and added more fresh dill.

Apple Oatmeal Muffins Recipe | Yummly

My Nordic Husband and I enjoyed the use of cardamom in these apple packed muffins. I used two big cooking apples for apple goodness. I used coconut milk and lemon, and coconut oil and appreciated the flavor. I needed to turn the temperature up and cook longer in my old oven. Hard to remove from muffin tins cause they are so packed with apple goodness.

Healthy Apple Crisp

I gave it 3 stars because good apples should not be peeled because that is important to eat the skin for good fiber and health; also, way, way too much sugar. If you use a good mix of sweet and sour baking apples very little sugar is needed especially if it is topped with ice cream. Taste test the apple mixture before adding any sugar and lemon juice and cut the sugar in half for the crust. Top with toasted nuts and vanilla ice cream.
