Real Hungarian Goulash (No Tomato Paste Here)

Wonderful! I used olive oil instead of the lard. (my Hungarian grandmas would shudder!) Other than that, I made as directed...yum! I'm making it again tonight. Thanks for the recipe.

Garlic Mashed Cauliflower

I've been making this for years, just omitting the cream cheese. My husband would rather eat mashed cauliflower than mashed potatoes! The only other thing I do differently is use an immersion blender to mix it instead of the food's easier. Love it.

Mizeria (Polish Cucumber Salad)

I've made (and eaten) this since I was a kid. The only changes I make is to omit the sugar and substitute garlic salt for the regular salt. I absolutely love and refreshing!

Latin-Inspired Spicy Cream Chicken Stew

Love this recipe! I found it just recently and have made it 3 times already. The only alteration I made to the original recipe is to omit the cilantro since we're not big fans of it. We've topped it with a dollop of sour cream and hubby also has to have tortilla chips with it. I'm making it to take to a church dinner this month too...Amazing flavors!

Chicken Paprikash

This dish is quite similar to what I grew up eating, my mother being Hungarian. To be a little on the healthier side, I use boneless skinless breasts and chicken stock instead of water. I've been making this for over 30 years and have never had anyone NOT like it. The dumplings are awesome! Hint: if you use an iced tea spoon and dip it in the boiling water prior to scooping the dumpling dough, you can avoid having to use two spoons. It's much easier. Thanks for sharing the's a wonderful dish!

Chicken Enchiladas Supreme

I made this last night for friends and it was a hit with everyone! The only variation to the recipe I made was to use one can of red enchilada sauce and one can of green since a couple people prefer the green sauce. It wa s bit of extra work to divide the chicken mix, but well worth it. The red sauce enchiladas were awesome! (the green were pretty good too, I just prefer red) I served the enchiladas with shredded lettuce, chopped tomato and sliced avacado on the side. was all so yummy, I'll certainly be making this dish again!

The Big Easy Jambalaya

I made this last night for friends to celebrate "Fat Tuesday, it was a hit! We all loved it. The only small variations I made was to add two chopped cooked chicken breasts when I added the sausage and shrimp and had to add a bit of chicken stock or it would have been dry. This is a dish I will certainly be making again!

I've been making this recipe for years and everyone who has eaten has loved it. I also do a variation using pepperoni instead of the ham, add some Italian seasonings and serve it for's wonderful and tastes almost like pizza! You can also make it lower fat by cutting down the butter and substituting half the eggs with egg whites. It's still yummy too!
