Strawberry Jam

Reviewed: Oct. 16, 2009
Although I used a thermometer, my jam was always 5 degrees shy of what it should be. The colour was great and it was slightly thick so I poured it in my jars. The jam thickened upon cooling and after a few days was the perfect consistency. Everyone loved this jam and although it started out really sweet, the flavours mellowed over time. Would make this again! 2 pints of berries made about 4 - 1/2 pint jars of jam.

Szechwan Shrimp

Reviewed: Jul. 29, 2009
Can't believe how fast this is! It's great because it uses common ingredients. Next time I'm short on time and thinking take-out, I'll break out the frozen shrimp and whip this up instead.

Biscuit Breakfast Sandwiches

Reviewed: Sep. 13, 2008
I enjoyed the meal although my 2 children who normally like biscuits didn't care for these. I should have read the directions more clearly as I mistakenly put 8 biscuits (1/2") thick into the oven instead of 6. Had I put all the dough into just 6 biscuits and rolled the dough to 3/4" instead of 1/2", mine would have been larger and risen much higher. These reminded me of Bisquick biscuits.

Cavatini II

Reviewed: Feb. 7, 2008
I've made this several times. I thought the pepperoni would be too salty but it's not the case. It adds a great taste and is a nice alternative to ground beef. I took a double-batch to a potluck and came home with an empty dish. I'm lactose intolerant and used lactose free cheese and it tasted great. My lactose free friends were delighted to have a pasta casserole that they could eat.

Lentil and Green Collard Soup

Reviewed: Jan. 17, 2008
Nice taste. Be sure to measure out the lemon juice to your personal taste. I, too, think I added too much when I used 1/3c. Be warned, I made this over lunchtime and everyone who was in the house while it was cooking all went outside and smelled of cumin and onion 0 and not in a nice way. I even had a person comment! I'd make this again although I'll have the windows open next time.

Grandma's Gingersnap Cookies

Reviewed: Nov. 19, 2007
Tasted great even without the topping! My cookies appeared darker than the photo (due to the molasses, I'm sure) although they did look just the same. I didn't flatten the cookies before putting them in the oven which probably resulted in a puffier rather than flat cookie.

Sloppy Joes II

Reviewed: Nov. 6, 2007
I've made this a few times now. My family (including my 2 picky children) love this. I found I had to really "water it down" big time since it seems so thick after adding the sauce. Even with all the extra liquid, it's still tasty. Oh, don't leave out the green onions, it adds significantly to the taste.

Classic Macaroni Salad

Reviewed: Nov. 6, 2007
My husband and I really enjoyed this. It's definitely the vinegar that gives this the right "tang". I found it tasty even before waiting the "4 hours" before eating. The sugar is necessary to offset the vinegar which can be overpowering to anyone not used to the sourness. I added the sugar a tsp at a time after everything was mixed until it "cut" the strong taste of the vinegar.

Blueberry Dessert Squares

Reviewed: Jul. 18, 2007
Tasty but it's a bit too sweet for my taste. I'd make it again but next time I'd use 1/4 or 1/2c less sugar.

Hillary Clinton's Chocolate Chip Cookies

Reviewed: Apr. 11, 2007
Quick to make and very tasty. I used 1/2c butter and 1/2c shortening. I only used 1c brown sugar and omitted the white sugar. They seemed plenty sweet to me w/o the white sugar.

Easy Apple Coleslaw

Reviewed: Feb. 28, 2007
Excellent slaw. I used red cabbage and mine looked drastically different but the taste was great. It's a refreshing salad which cheered up a gray day in the middle of winter. This would be a good summertime salad. I was wary of the red pepper but it was fine in the salad. The apple really added to the taste. This would be great to bring to a pot luck.

Tomato Barley Soup

Reviewed: Feb. 27, 2007
Very nice soup. I made it exactly as written although I agree it could have used more barley - perhaps 1/3 cup. Very nice colour to the soup. The smell was wonderful while cooking. I'm at home with two sick children and the whole house smelled of "comfort". I'll definitely be enjoying this for lunch.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Nov. 7, 2006
Used 4 legs and 4 thighs and it wasn't enough. The chicken was gone in no time! I'll double this and make it again. I was worried at first about the lack of liquid I poured over the chicken after frying it but it was just right! Sure enough, the chicken was done in 3 hours on high. Ooops, forgot the parsley and didn't notice until I just checked the recipe now.

Quick Spaghetti Sauce

Reviewed: Oct. 24, 2006
Pretty good for a quick sauce. It sure beats the stuff in the jar! I thought 1 green pepper would be too much but once it's blended in, you hardly notice it's there. I'm glad I used the entire pepper.

Sicilian Lentil Pasta Sauce

Reviewed: Feb. 15, 2006
Very tasty with great texture. My meat-loving husband had second helpings. My 6 year old daughter who normally only eats pasta with butter also tried this dish and enjoyed it. I'd make it again.

Cocktail Meatballs

Reviewed: Dec. 7, 2005
I was a skeptic right until I tasted them. Especially when I saw the cranberry jelly and chili sauce. I used frozen meatballs and the combination was great. Made meatball subs with the leftovers the next day. I'll definitely make these again. Great potluck fare!

Turnaround Turkey and Rice

Reviewed: Oct. 15, 2005
I was a skeptic but with several pounds of leftover turkey, I was willing to try this recipe. It was quick and tasty. Heating the turkey in the onion/butter mix was just the ticket to removing that "day old" refrigerated taste I find turkey gets. I also added parsley to add some colour as another reviewer suggested. Finally, I didn't have turkey gravy so I used a tin of Campbell's chicken broth and omitted the water called for. It turned out creamy and good!

Best Apple Crisp Ever

Reviewed: Oct. 6, 2005
I took the other reviewers' advice and cut down on the sugar. I used 1/2 cup of white and brown sugar and added freshly grated nutmeg. I buttered the baking dish before adding the apples and brown sugar so there was no sticking. I also added 8 cortland/ida red applies instead of 6. I found I had to use a pastry tool to crumble the topping before adding it to the apples. It looked great coming out of the oven and tasted pretty good. The crunchy topping was definitely different than the oatmeal based. Not really better or worse, just different. It's a good recipe but I like my old one better.

Gingered Chicken Breast

Reviewed: Sep. 27, 2005
My first thought was: "how can this tiny bit of marinade season all my chicken". After cooking it, I was pleasantly surprised at the "big taste". I added salt (since I'm not on a diet) and it was great. Even my kids ate this. My only regret was not making more.
