Beaker's Vegetable Barley Soup

This soup is SO good! I followed several reviews - cooked in the slow cooker on low for 8 hours, used 10 cups of veg. broth (2 cups extra than recipe calls for), added a can of V8 instead of tomatoes cause I don't like tomatoes, and threw in a bit of cabbage. I also used fresh parsley (since I had some that was wilting), chopped garlic instead of garlic powder, and crushed bay leaves. The spices in this recipe make such a great combination - thanks for sharing!

Garden Paella

This was a very tasty, easy and healthy meal. I used jasmine rice, and saffron instead of turmeric. Added in some asparagus; used frozen peas & carrot mix. Also used an extra half cup of veg. stock. My husband liked the artichokes but I might leave them out next time. We are trying to do one vegetarian meal a week and this was an excellent dish! :)

New England Dinner

This was really good and so easy! Following several reviews, I used a bag of cole slaw mix, 2 cups of vegetable stock instead of water, covered with foil, cooked for 45 minutes, and topped with sour cream. Very yummy! :) (also, used turkey kielbasa)

Spaghetti Squash with Pine Nuts, Sage, and Romano

This is awesome. Added some minced garlic and fixed a side of marinara for my hubby...ended up fitting both our tastes perfectly. Thanks for the recipe!

Carrot Casserole

This was really good. Used 2 cans of canned baby carrots and just pureed all ingredients together in the blender. Used 1/2 cup of sugar and 1/2 teaspoon of nutmeg, otherwise no changes. Did need longer to cook - probably 45-50 minutes. Served with pork chops and made for a nice autumn side dish.
