Sushi Roll

Reviewed: Jan. 15, 2011
I have had homemade sushi and restaurant sushi and I didn't care for this. Way, way too sweet. I made it according to directions and my rice was very wet and extremely sweet. I made it again and halfed the sugar and also used less vinegar and it was still really sweet. I couldn't finish my roll.

Awesome Slow Cooker Pot Roast

Reviewed: Dec. 11, 2010
Mmmmmmm. I have made this recipe twice. The first time I just added the roast(raw, unseasoned), soup, onion mix, water, potatoes and carrots to the pot. It was really good, but oh man this second time Iit was out of this world good. I seasoned the roast on each side with salt, pepper, oregano, sage and garlic powder. Then dusted that with flour and browned it. I added one can soup with one can beef broth (small roast size), one packet of soup mix, some minced garlic, potatoes and onions to the pot. Cooked it on high 4 hours. Added a little more flour to thicken and a 2 lb roast was completely gone and it is just my boyfriend and I. I was hoping for a second meal out of it, but it was just goo good!!!!

Cha Cha's White Chicken Chili

Reviewed: Nov. 21, 2010
I didn't have some/all of the ingredients on hand and so I made a few alterations. First, I do not like beans so I left them all out. I love chicken chili with tomatoes so I added two cans of diced w/ green chiles tomatoes with the juice. I only had one can of broth. I omitted the cayenne and cumin, but added a dash of paprika. Only diced about 6 slices of jalapenos and it was still spicy. We like it hot, so it worked but I probably wouldn't serve it this spicy to guests. Also, there was plenty of juice because of the tomatoes. Fabulous!! We usually use the packets at the store and this was much better.

Red Velvet Cake I

Reviewed: Nov. 20, 2010
I followed the suggestions of other people on this site and increased the sugar in the cake to two cups and the cocoa powder to 4Tbspns and while you could pick up the chocolate it wasn't over powering, which is how a red velvet should be...they are not red-dyed-chocolate cakes. However, I think I should have stuck to 1.5 c of sugar or maybe 1 3/4 because our cake was very sweet. I also substituted a cup of oil for the shortening and it was still dry. In fact, I over poured into my measuring cup and there was actually 1 and 1/8 and it was still dry and dense. I made it into cupcakes and it was kind of mouth full to chew. I prefer my cakes EXTREMELY moist, especially if I am not eating ice cream with them so next time I will increase the oil maybe to 1 and 1/4 cups. Also, while the batter was not hard to make the icing was a nightmare. I had fifteen minutes left on the timer when I started the icing and it took all that plus some to get the stuff to thicken. My grandma said while you do stir it over low heat, it will come to a simmer if not a boil before it thickens which is why you must continue to stir or you will get a clump of flour mess. Still when I added the butter it was so liquidy, there is no way it would stay on the cupcakes. The icing was also sweet. I guess next time I will thicken it even longer and add less sugar.

Pumpkin Cheese Bread I

Reviewed: Oct. 25, 2010
The flavor of this bread was delicious as a batter and then it was like all the flavor baked out. It still had good flavor, it just wasn't as good as anticipated from the batter taste-test. Also, this is not moist. I knew I should have added oil to the recipe. When someone tells me bread is moist, I expect something like Bob Evans bread. This border lined being dry. I thought I would make this to give to my girls friends - I will keep this to myself.
