Pizza Dough III

Great recipe! Quick and simple, with only 1/2 hour to rise, it doesn't take much longer than delivery ;-) I like to add a little bit (a tsp or so) of garlic powder and onion powder, you can add anything you'd like to enhance this yummy basic recipe! Its our go-to pizza dough :-)

Absolute Best Pancake Syrup

Delish!!! I'm not really a big fan of maple flavor, so for me this syrup is perfect - tastes like a cinnamon roll. I was seriously licking the pan! ;-) it was runny when it was hot, but thickens up nicely once it cools - so make ahead if you can. Make sure you make it in a pan large enough to accommodate the increase in volume when you add the baking soda - it really foams up! The bubbles disappear after it has cooled for a little.

Classic Peanut Butter Cookies

wonderful recipe! these turned out perfect! I read other reviews and wanted to make sure they didn't spread out, so added a small (3.5 oz) pkg of vanilla pudding mix, also I only had creamy peanut butter and wanted some texture so I ground up about 1/3 cup extra whole peanuts in my food processor and added it into the mix at the end. Perfection!!! :-)

Creamy Au Gratin Potatoes

These potatoes were incredible! I haven't made au gratin potatoes before, but have eaten my fair share ;-) these were possibly the best I've ever had! So yummy! I finely diced the onion since we prefer it that way, and added a bit of extra cheese, and I threw in some asiago with the mozzarella. Yum! I made them in a slow cooker since my my oven was being used for something else (I slightly par-boiled the potatoes first, then cooked in crock pot for about 2 1/2 hours on high) and they turned out perfectly! This one's a keeper, it will be a new holiday side-dish staple in our house! :-)

Easiest Mac-N-Cheese Ever!

Simple, quick, easy - and all my kids love it (hubby included!) What more can I ask for? It is yummier than boxed mac n cheese, and almost simpler too! I'm not really a fan of processed cheese, but my husband & girls love the stuff. This is basically melted processed cheese with noodles, so if you like kraft singles, you will love this :) I think next time I will add a little bit of butter to the noodles like other reviewers suggested. This this recipe will work with any shape noodles (we like wacky mac!)

Grilled Pizza

Great recipe! I didn't grill it, but placed the rounds of dough under the broiler for 5 min or so (I shaped two 10" rounds from half of the dough - the other half is in the fridge for the next time a pizza craving strikes!) :-) once they were lightly browned (I pricked the dough with a fork to make sure it didn't bubble up) I removed them and let them cool slightly - at this point they were just like the boboli store-bought prebaked pizza dough. Once they cooled a bit I added our toppings and put back in the oven at 425 for 10 -15 minutes. Perfection!!! We like a flatbread type pizza, and this was just right!!! Love it! This will be our go-to quick pizza dough recipe (the consistency of the dough is just like the refrigerated dough we love from Trader Joe's!). This summer I will definitely have to try the grilling method, I am sure that is fantastic too!

Award Winning Soft Chocolate Chip Cookies

I have made this recipe so many times now I have lost count! They always come out perfect - they are our families favorite cookie! We love our cookies soft & chewy, and these are the best! I like them best with walnuts, but I don't usually put them in since the kids like them better without. Either way, these are delicious! The pudding mix gives them a great soft texture, and they stay soft for days (but they don't usually last that long!) ;)

Best Brownies

These are fabulous! I made them into gluten-free since they were for a friend who can't have gluten (used a mix of tapioca starch & rice flour instead of all-purpose flour) and they were perfect! I also didn't have an 8" square pan, and I didn't want to double the recipe to fit into my 9x13, so I baked them in muffin tins and they made 12 perfect little round brownies :) the muffin tin turned out great because every piece has that delightful crusty edge - YUM! (I may do brownies that every time from now on!) note: the baking time was less in the muffin tins (they were done at about 18-20 minutes) I also didn't make the frosting so can't rate it, I just dusted with a tiny bit of powdered sugar to 'pretty' them up, and they were just great as-is!

Irish Soda Bread Cookies

Very tasty! I tried this recipe out to test it as I am thinking about making these for St Patty's Day - they turned out great! I didn't use currants or caraway (didn't have them on hand) and since I am planning to bring them in to my daughters kindergarten class I added mini choc chips bits (chopped them up a little) and sprinkled the tops with green sugar. I used my shamrock cutter - so cute & they are delicious! The kids will really like the choc chip bits & sugar sprinkles, but I would like to try making these the traditional way next time, I am sure that would be great as well, for the grown ups. :)

Mini Pumpkin Butterscotch Muffins

Morning Glory Muffins I

Fabulous!!! I made these as mini muffins and the whole family loved them - I grated the apple and carrot, omitted raisins (our preference) and just used a basic brown sugar/oat topping instead of the wheat germ and nuts (wanted to keep them nut free so they could go to school for snacks) I loved them since my picky 2 year old loved them & she had no idea she was actually eating carrots & apples - yay!

Tater Tot Casserole III

This was pretty good, but a bit too rich for us. I think we just aren't tater tot casserole people, but I thought I would give it a try since everyone seems to love them ;-) It wasn't bad - if you like tater tot casserole, give this a try!

Whipped Cream Frosting

I had good results with this frosting - it was pretty yummy (I don't really like frosting - but this was really nice, light and fluffy, and not too sweet, but I could taste/feel the butter/crisco texture a little) I think the key is to keep beating it - I tested it after adding the milk/flour and beating for several minutes & it was a bit greasy and grainy, I wasn't sure it was going to turn out. But, I kept it going in the stand mixer for another 5-10 minutes and it magically became smooth & light, more like whipped cream. Next time I will probably just use regular stabilized whipped cream (add a tsp of dissolved gelatin to the cream after soft peaks form) much easier and tastes more like whipped cream (because it is!) ;)

Heavenly White Cake

I was so impressed with this cake! It is exactly what I have been looking for - dense but extremely moist & tasty! The flavor is perfect - sweet (but not too sweet) and the hint of almond and vanilla is sooo yummy! I'm making a couple of sculpted birthday cakes this month & I have been searching for a nice white cake - my search is over! Thanks for a great recipe! (I followed the instructions about sifting the flour before measuring & then sifting it again 3x more with the baking powder & salt. I also whipped the heck out of my egg whites until they were forming nice soft peaks, then incorporated it thoroughly into the batter. The batter was thick & fluffy - like cool whip, and it baked into a beautiful moist cake. YUM!

Chocolate Coated Peanut Butter Crackers

Brilliant! I can't believe I had never heard of these! I just made a batch with some Annie's Bunny Shaped Saltines that I had in the pantry - I spread marshmallow fluff on one cracker, and creamy peanut butter on the other, then sandwiched & coated with semi-sweet choc chips melted with a tsp of Crisco - they are AMAZING! The bunny & heart shaped crackers were adorable - I will be making these for Easter for sure!!! (and other variations every other holiday from now on!) :-)

Roast Sticky Chicken-Rotisserie Style

Delicious! Didn't change a thing except halved ths spices (only roasted one 5 lb whole chicken) the cooking time was about 4 1/2 hours (turned it up to 275 towards the end to make sure it was done in time for dinner) Everyone loved this - its our new favorite! I will definitely be making this again & again.

Cheese Sauce

I have been looking for a quick & easy cheese sauce to help tempt my little ones to eat their veggies. This did the trick! I used medium sharp cheddar with great results. note: I followed the advice of other reviewers and added the cheese LAST. I boiled milk with spices & then added the cornstarch (mixed with a small amnt of milk to make paste) once thickened up, then I added the cheese. (I may have used a bit extra - we love cheese!) YUM! it was super creamy & delicious ;-)

Spinach Brownies

These are very yummy! They are like little 'quiche bites'. I just wish my kids would have liked them...I had high hopes, but sadly they wouldn't give them a chance. Probably because they are green! Oh well, I thought they were delicious :) Oh yeah - I should mention - I seasoned them with a bit of black pepper and also added garlic powder. If I make them again I think I will add diced red pepper - hmm... that would be festive for Christmas day brunch! :)

Aunt Teen's Creamy Chocolate Fudge

This turned out fantastic - so creamy and delicious! I had never made fudge before and was a bit nervous, but after following suggestions from other reviewers (stirred for 6 1/2 minutes from full boil) pre-measuring the ingredients helps too - you need to be ready to dump the chocolate in as soon as it is time and stir like crazy then pour :) I added 1/2 tsp of peppermint extract when I added the choc chips and also dusted the top of the finished fudge with crushed peppermint. Yum! It turned out so delicious!!! I made it to give away but am going to have a hard time not eating it all!
