Banana Oatmeal Bread

This bread was wonderful and I love the texture the oatmeal gave it, I did tweak the recipe like others, I used 1/4 c of applesauce and 1/4 c of coconut oil, I also used 1 tsp of vanilla. I made the batter and added 1/2 c of walnuts, poured out 1/2 the batter in a smaller loaf pan. Then I added 1/4 chopped dates to the remaining and poured that into a smaller loaf pan. My family doesn't like dates, but my boyfriend does. Hence 2 loafs. I cooked those for 45 mins and they were done. This is a keeper for me.

Fajita Seasoning

I made this seasoning w/o the cayenne pepper, I don't like things too spicy. I wasn't sure how to use it, so this what I did. While cooking the veggies,onions & mushrooms, garlic, I also added some red & yellow peppers I had cooked and were in the freezer. I added about 2-1/2 Tablespoon of this to the veggies after they had cooked awhile. I removed the veggies, from the pan, I added some water- 1/2 cup to the pan then added the rest of the seasoning, while the sauce thickened a bit, I ended up adding a more water (1/2 c), (making sure I smashed all the lumps) I added my thin sliced steak, (my was sirloin) I cooked it until the steak was done, It was delicious and the everyone in the house keep asking what I was making because it smelled so good.

Cinnamon Stove Top Granola

This was my first time making granola and boy was I impressed with the results, very very yummy. I used sliced almonds and I used dried cranberrys because that was what I had. i'll never buy store bought again, my dad eats yogurt every morning w/ granola. I can't wait until he tries it. It was very crunchy and chewy and clumped together wonderfully, just all over great! I think I will try it with orange extract! Thanks for the great recipe! Roweena I am giving it away as gifts this Christmas along with some other homemade goodies. Maybe I should add that I substituted coconut oil for the olive oil, and I didn't have molasses but used dark pancake syrup from Karo instead. I also have been using Cinnamon Plus from Pampered Chef, a wonderful blend of spices for cookies, etc. It all worked!

Kentucky Pecan Pie

I made two for Thanksgiving 2012; going to make it again this year, very yummy and it held up well, I liked the idea of the vanilla another review recommended. Used brought pie crust.

Incredibly Cheesy Turkey Meatloaf

I really love this recipe, I do change it up a bit. I use oatmeal instead of bread crumbs, I have been doing this for years, my daughter does it too. I also use dry ranch dressing mix about 3 to 4 tablespoons, as well as the other seasonings. I use different types of cheese, I love feta cheese in this. like other reviews mentioned, I use a sweet bbq sauce instead of the ketchup on top....yummmy

Apple Squares

My Dad loved these apple squares, so he would give them a 5 stars, I thought they really needed vanilla ice cream with them, which I didn't have, they are very sweet, I thought they were going to be more chewy, but mine were more cake like. If I make again, I will tried and tweet it so they will be more chewy. I also had gala apples which I added a large tablespoon of lemon juice to them after I cut them up and stirred it up to make them tart tasting. I also only lightly covered them with cinnamon sugar like other reviewers suggested.

Oatmeal Chocolate Coconut Chewy

I just made these cookies and they were soooo yummy, crunchy on the outside, chewy on the inside. I did make a few adjustments. I used self-rising flour and eliminated the baking soda & salt. I also only had white chocolate chips and not quite a cup. I used pecans and broke them up smaller than what they came in the package. I did use 1/4 cup less white sugar, b/c I used sweetened coconut. I also added a spiced blend from Pampered Chef, it had cinnamon, nutmeg, ground orange peel, clove and ginger. I used about a tablespoon. I put half the mixture in the refrigerator to make later, so wait to see how the chilled dough cooks up.

Pineapple Bread Pudding

The only reason I rated this 4*s is because mine came out very dry and I think that was because I drained my pineapple very well. It needed a little bit more liquid. I followed the recipe except that I use Splenda blend (1/2) instead of the 1 cup of sugar. I only used 1/2 cup margarine. I also used 100% wheat bread since that's all that I had. Since it was a little dry, I microwaved some all-fruit orange marmalade for about 25 seconds and pour this over the pudding....it was 5*s... I also did not have raisins so I used dried cherries. I also sprinkle pecans over it. I can't wait to make this again.

Key Lime Pie - Low Carb Version
