Mahi Mahi with Onions and Mushrooms

This recipe is fantastic! I have also used it with Talapia. I'm always looking for fish recipes that my kids will like, and all four plus my husband loved this!

Scottish Shepherd's Pie

Super-easy recipe that kids love and so quick to make! I used instant mashies, but I would suggest making the potatoes a little stiffer so the cassarole isn't too watery. Also, I used 1 can of regular corn and 1 can of creamed corn.

Easy Pork Chop Casserole

Super easy recipe! I browned the chops in an stovetop-to-oven pan which made it a one-dish meal. Very tasty way to prepare lean chops. I served wild rice as a side and the sauce was delicious with it. Kids may not like all the mushrooms, but, if your kid is a mushroom lover like mine are, they'll love it, too!

Meatball Soup

Good family recipe. I served over a thick slice of buttered sour dough bread w/more on the side. Husband liked it better than the kids, but they liked it, too. Everyone ate it! I loved it.

Easy Tuna Casserole

Garlic Salmon

If your kids like salmon, they will LOVE this dish! Super easy to prepare. Mom & Dad love it because it is so tender and has absolutely no oil. Very healthy. I found that I needed to cook it a bit longer than indicated. Watch it closely.

Slow Cooker Macaroni and Cheese II

This is a very easy recipe, a snap, but very, very rich. My kids and my husband found it too rich. I plan to make it again, but modify it by cutting back a bit on the cheese and decreasing the evaporated milk, substituting with regular milk. Also, unlike other crock pot dishes, this cannot be left too long over 3 hours or it does begin to dry out.

Ambrosia Fruit Salad

Everyone loved this from kids to Grandpa and it was SO EASY! I have one kid who hates coconut & one who hates nuts and it was very easy to set aside portions before adding those items. Also, I used the Fat Free Topping for a lighter dish.

Slow Cooker Pizza

My teenage boys loved this recipe. A really hearty dish. However, it's really, really fattening for the rest of the family! It's a good crowd pleaser when my boys have their friends over or a take along to a sports potluck.

Tequila Cocktail Sauce

WOW! This was a BIG HIT! It was the most popular item at my last dinner party! Keep in mind that this recipe is for a HUGE batch. I halved it and still had lots left over. I highly recommend it.

A great dish to make in a hurry for the kids! I sprinkled some chopped walnuts on top. Remember to increase the microwave time if you make a larger rercipe.

Potatoes in Paper

Very good recipe for company. I used parchment paper rather than foil so the cooking time was shorter. Guests loved it! Nice presentation, too. Bring the whole parchment packet to the table.

Shrimp Fondue

Wow! Great recipe! I followed the advice of others and added the little salad shrimp...great addition. Also added Old Bay and a dash of tabasco. I used reduced fat cream cheese and sour cream and even my husband couldn't tell! THat's an accomplishment because he can almost ALWAYS detect a low fat recipe! I mine heating over just a tea light and it does begin to bubble pretty quicky. Keep an eye on it. DELISH!

Coconut Ambrosia Salad

Great, easy recipe. Good comfort food and great for a quick, throw-together family pleaser. However, I used only one 8 oz. tub of whipped topping and 16 oz. of sour cream, both low fat. I think it tastes a bit richer and sets better with the addition of the sour cream. My husband and father-in-law both loved it, kids too (of course!)
