Spicy Lentil Dip

YUM! We like things spicy so I used 1 tsp each of hot and mild curry. I also added 1 tbsp of coriander seeds thanks to suggestions from the reviews AND, as also suggested, I did not use all the liquid or it definitely would have been too soupy. I put in my food processor and added the liquid a little at a time until I got a good, thick dip consistency. I think I ony used half of the reserved liquid. And I also added a little onion salt. It's a good recipe to play with and make your own but is it good? YES!

Spicy Flank Steak

This is an excellent recipe EXCEPT I would recommend cutting the steak against the grain on the diagonal into several strips before cooking it. For me when I cook the flank steak whole I end up with burned edges and the middle not done enough. Cutting into strips allows you to give everyone the degree of doneness they want.

Roasted Rack of Lamb

This is an excellent recipe that makes lamb easy for beginners and still gives you a very pretty and delicious dish! Do not skip the searing...very important and keep a close eye so not to overcook. Lamb can go from just right to overcooked in a very short time.

Quick and Easy Chicken Noodle Soup

GREAT recipe! A few changes I made are...I sauteed the carrots along with the onion (they end up more tender), I didn't use any veg broth but all homemade chicken broth (it's richer), I added minced garlic along with the othe veggies that cook in the butter, and I doubled the noodles (this made it more a chicken & noodles dish but it was delish!). This is a great way to usue a rotisserie (sp?) chicken on the second day. I really really recommend this recipe! I also freezes well!

Baked Tomatoes Oregano

This is a delicious recipe. It's also a great way to serve "winter tomatoes" when it's off season and all the tomatoes in the grocery are bland. I served it with grilled flank steak. YUM!

This is an excellent recipe but you must be careful. If you refrigerate it too long or if you are even a little off on the amounts of the ingredients you can have problems such as it being stiff and unworkable. However, it is very authentic and if you are willing to practice well worth following.

Cucumber Crab Snacks

These are an excellent tasting and elegant looking appetizer that will make your calorie concious guests happy! They are not too heavy and so won't fill your guests up. I have also used a small cooked shrimp in place of crab and sometimes add a layer of cream cheese between the sauce and the cucumber. I also peel the cucumber so that there are alternating strips of peel for nicer presentation. A hit every time!

Grilled Corn on the Cob

I loved this recipe but my husband thought it was bland. Next time I think I will try a spicy pepper blend or an herbed butter. Also might work to place a sprig of rosemary inside the foil. I does need a little jazzing up.

Herb Cheese Butter

Easy to prepare. I used fresh oregano. Also I used it as a spread on french bread and broiled it for a few minutes. Everyone said the bread was the best part of the meal!

Easy Whipped Cream

Absolutely delicous! The ability to make it several hours ahead is very helpful when entertaining. It holds up very well. I made it about six hours ahead. I was serving 8 and I doubled the recipe and it was just enough. Also, I increased the confectioners sugar by 1/3 and liked how it came out.

French Shrimp Salad

I little on the bland side but overall good. Very pretty. I followed the previous reviewers advice and cut back on the dressing and it worked out well. It's a great way to use up leftover shrimp from a party or recipe.

Mexican Shrimp Cocktail

Really really good. Actually, it reminded me of etoufee sauce such as they hafe in New Orleans. I served it in individual shot glasses with a few shrimp and some sauce in each. Also, I added some tomato paste to thicken it up and pureed it in the food processor which gave it a more blended flavor.
