Easier Chicken Marsala

This is yummy and fast but if you are cooking it for someone who loves chicken marsala, they may be disappointed as it doesn't taste like the "real thing." If you have time, DO pound the chicken. Makes a world of difference.

BLT Pizza

Yum! My husband had never had BLT pizza before and he LOVED IT! If you cook for or are a BLT fan and a pizza lover, try this! Only thing I did differently was use garlic salt instead of regular salt.

Easy Sausage Stuffing

Just ok. Didn't knock anyone's socks off. But I froze the leftovers and then reheated it in the crockpot on low for about five hours adding two cans of chicken broth. THEN it was fabulous!

Baked French Toast

Delicious!!! So easy!!! I will never fry french toast again!!! I served this with a warm fruit compote that I made in my crockpot and started the night before. I popped my french toast in the oven in the morning and voila a perfect brunch!

Fresh Rhubarb Pie

Great basic recipe that does the trick for rhubarb lovers! Perfect combination of tart & sweet. My only suggestion is to brush the top of the pie with one egg mixed with a tbsp water and sprinkle with sugar. Repeat about halfway through. Helps keep the crust from browing too fast and gives it a really sweet crispy finish. LOVE THIS RECIPE!

Tomato Cucumber Salad with Mint

My husband LOVED this salad so it was a hit at our house, but he is a big cucumber and tomato fan. I used less mint than called for (about 1/4 a cup) and it tasted great. If you love cucumber tomato salad, try it, but go light on the mint at first. I think 1/2 a cup could've been overwhelming. Also, definitely needs salt and pepper. Plan adding it at the end.

Bacon Cheddar Deviled Eggs

Everyone loved these, even those who weren't big deviled egg fans. I did add a few dashes of tabasco and also used my homemade Jack Daniels Mustard which is on the spicy side. Garnished with Hungarian paprika. Delicious!

Creamy Vinaigrette

Delicious! I used fresh lemon juice. When I need lemon zest I juice the lemons and freeze the juice so I had it on hand. I served steamed salmon on a bed of greens and drizzled this dressing all over it. My husband ate every last bit! Thanks! A+++

Lemon and Cilantro Shrimp

Absolutely delicious!!!! Zesting six lemons is a lot of work BUT you can do it in advance as lemon zest freezes very well. Lemon juice also freezes well so I just squeezed the rest of the lemons and froze the juice. Also, I added four chopped roma tomatoes as my husband loves them. I think they added color and a bit more flavor without overwhelming the dish. If you love cilantro and shrimp, fix this!

Sauerkraut-Stuffed Slow-Cooked Pork Roast

So so so easy and good! I added a cup of applesauce on top of everythign. Also, I used a lot more sauerkraut than called for so as to have leftovers. The next day I put the kraut back in the crock with a few boneless pork chops & got another meal out of it. Stuffing the pork loin with the kraut makes it so moist! The second time I made it I used my new rectangular slow cooker. It cooked a little faster but was better due to all of it cooking in the same amount of liquid. I also added for apples cut in wedges instead of applesauce and sprinkled 1/4 cup brown sugar over all. These were great tweaks! The second day, I reheated it in my mini crock and added 1/2 cup apple cider. My husband said it was better the second day! LOVE this recipe!

Very good and so easy! Watch them closely as they do burn quickly. Also, put them on the top rack as opposed to a lower one. Three ingredients? Yummy cookies? Love it!
