Nana's Acorn Squash

big improvement timewise! Makes making just one squash very easy and quick, You don't have to plan an hour and half in advance. Personally I prefer to just melt the butter in the microwave along with the brown sugar and spoon it into the squash. Seems easier than messing with the broiler!!!

Baked Slow Cooker Chicken

Wonderful recipe! My husband and adult son pretty much ate the entire chicken between them! Reviews were very helpful (thanks!). I used the aluminum foil balls. I added chicken broth and red wine to the bottom and replenished during cooking. I put several cloves of pan roasted garlic inside the chicken and added a chopped onion, a few chopped carrots and a few chopped celery stocks to the wine/broth. I rubbed the chicken with paprika and Mrs. Dash garlic mix. I cooked on high about two hours and then low about five hours. It was very most but I could tell it would've started to go dry if I had let it go longer. Next time only one hour on high. Also I flipped it three times. Don't know if this helped or not since I'd not made it before but the end result was certainly delicious! I strained some of the juice through cheese cloth and whisked it with some cornstarch for YUMMY gravy! Served with green beans and garlic mashed potatoes and it was a HIT. After carving the chicken, I threw the remains back in the pot, covered with water, and cooked overnight for a WONDERFUL homemade broth! Love this recipe! I don't know what the reviewer who gave it one star was talking about? The recipe clearly calls for a whole chicken. That review ought to be removed.

Strawberry Trifle

This made a delicious LOW FAT dessert! I used fat free milk and sugar free pudding. Delicious and light. Husband loved it! Do have all your ingredients ready to go and then make the pudding because instant pudding sets up fast. I might try adding some chocolate syrup next time as well. Will definitely make again!

YUM! Agree REDUCE THE SALT, You can always add more if you want. I didn't have any cayenne so I used a little chili powder and it was delish!

Garbanzo Bean Soup

ADD LIQUID! Otherwise awesome! I loved loved loved this soup. However, after reading the reviews I added two extra cans of tomatoes and one can of chicken broth. Came out a nice thick soup consistency. I served with with lamb chops but it's definitely hardy enough to stand on it's own with some nice crusty bread. I used whole wheat small shells which is what I had on hand and it was great and also healthy! I also added roasted minced garlic and a few dashes of hot sauce. I will definitely make this again.

Individual Baked Eggs

real simple and real yummy! I made two for myself and then made another one! I used Pam instead of butter and used a nonstick muffin pan and it worked fine. I also used precooked bacon and that was fine too

Cucumber Tomato Salad

I really liked this. The only reason I didn't give it five stars is that my husband didn't like it so much, but he's pretty much a vinegar only guy when it comes to cucumbers and tomatoes. I liked it a lot!

Apple Pie Filling

This an easy pie filling when you want to make just a few batches. I scales it down to 10 servings which was exactly right for two pies. I made it a few days in advance and kept it in the fridge for my company so I can't so how well it freezes; however, it did do very well in the fridge and made great pies!

Sour Cream Salad Dressing

SO easy and absolutely delicious! I used fat free sour cream and offset that with whole milk to give it a bit more body but still cut some fat. I used a spicy brown mustard which was fabulous. I like this recipe because of the variety of mustards you could use to give it a different taste. I also needed a pinch more salt than called for but that's just a matter of individual test. I will definitely make this again. Oh, and its a GREAT way to use up that leftover 1/2 a container of sour cream in the fridge!

Mustard Vinaigrette

Chicken Marsala

Really really good. Here are my little tweaks/suggestions: I cut the chicken breasts into about six pieces each before pounding them and also make sure and trim the fat. After removing the chicken from the skillet, I deglazed it with about 1/4 cup marsala and dash of sherry. After it reduced by about 1/2 I added about 1/8 a cup of cream and stirred/cooked for about 1 minute more. Poured it over the top of the chicken. DELICIOUS!!!!

Marinated Shrimp

This recipe just had a little to much "stuff" in it for our taste. The marinade was actually very thick and clung to the shrimp. I think it could be better if the ingredients (especially the capers) were pureed first.

Leslie's Salty Grilled Potatoes

Great recipe! Even my husband who doesn't really like potatoes liked it! I think I left them in the grill a little to long as the skins were pretty charred but the insides were yummy! Next time I'll just leave them a bit less time. Also I followed the advise of one of the other reviews and pierced the potatoes before wrapping them and then just cut little slits in the foil. We had no problems with foil stuck in the potatoes. And I think piercing them prior to wrapping them lets the butter mixture penetrate a bit more. This recipe is a KEEPER.

Very easy recipe. A little bit bland but that's easily corrected with a dash of hot sauce. Made it for some Spanish guests and they LOVED it.

Strawberry Soup

I made this for a dinner party I hosted in Paris. None of my French friends had every had such a soup and they LOVED IT! Plus we drank the rest of it for breakfast the next day!
