Meatloaf that Doesn't Crumble

Cider-Roasted Chicken

My family loved this chicken! Even my super-picky daughter was raving about it! I did alter the recipe. I reduced the cider on the stove before putting it on the chicken. I also skipped the potatoes, green pepper, and tomatoes. I put thin slices of onion all over the chicken, and poured on the apple cider reduction, then put the bacon on top. I basted a lot, and it came out beautifully! Thank you!

Mrs. Sigg's Peanut Butter Cookies

My daughter helped make these, and she was so proud because they came out of the oven looking beautiful and they tasted great. We used 2 sticks of butter and just a little extra peanut butter. The cookies came out nice and soft, with just enough peanut butter flavor but not too much either- just perfect!

Bread Pudding II

I made this using leftover iced cinnamon rolls. Since the cinnamon rolls were already so sweet, I only used about 3/4 cup of sugar. It turned out wonderfully! Pure comfort food!

Stuffed Chicken Breasts

I didn't use the soup for this recipe. Instead, I took another reviewer's suggestion and laid the butterflied breasts in seasoned bread crumbs while filling so it was coated. I did dip the breasts in egg before I lay them on the bread crumbs. I seasoned the bread crumbs with Old Bay seasoning. I also sprayed the rolled up breaded chicken with some Pam to make it crisp up nicely. Every single person in my family really liked this dish. My youngest even went back for seconds when she usually doesn't enjoy chicken much. This recipe is a keeper!

Big Soft Ginger Cookies

These are great! Perfect for my children who aren't fond of strongly flavored gingerbread. I didn't have any cloves so I used a little extra cinnamon and ginger. I sent a tray of these over to the senior center, and they looked so nice, just like bakery cookies- the seniors ate them right up also!

Bacon Cheese Muffins

These muffins were a good, quick breakfast for my kids. I did substitute chopped up fried pork roll for the bacon, and I left out the lemon pepper seasoning. I made these at night, and the next morning I popped them into the microwave to warm them up. They reheated nicely. My kids enjoyed them, and have requested that I make them again.

Angel's Old Fashioned Beef Stew

I made this recipe as originally written, except I used regular onions cut into pieces, and I added a half-can of peeled chopped tomatoes. My husband absolutely loved this stew! I think this was one of his all time favorite meals ever!

Gingerbread Boys

My kids were eating these cookies as fast as I was making them! I did leave out the orange zest due to allergies, and I substituted molasses for the corn syrup. I used half butter and half vegetable shortening, and I used liquid egg substitute instead of the regular egg. The result was the best gingerbread cookies I have ever made! Absolutely fabulous!

Mom's 'Sweet 'n' Sours' Pork Ribs

These came out really good! My kids told me to definitely make this recipe again! I browned the ribs in oil and garlic, and then whisked the rest of the ingredients together. I used mostly white sugar but did use some brown sugar. I marinated the ribs for an hour or so, and then put the ribs and all of the marinade in the oven for approx. 1.5 hours. The sauce came out perfectly, and the ribs looked wonderful plated. I served the ribs with rice.

Make-Ahead Mashed Potatoes

I made a double batch of these one day ahead for Thanksgiving supper. I used regular white potatoes. These turned out great, and reheated nicely the next day. There was none leftover! This is the recipe will use from now on for large gatherings.

Super easy and very tasty! I used small slices of french bread and left the crusts on. I mixed the cheese right into the mayo/mustard and then spread it onto the bread slices.
