Savory Green Beans

Delicious! I didn't have a shallot, and couldn't bring myself to go to the extra expense since my grocery only sells them in little bags of 4 or 5, rather than singles in the produce department. So I substituted a small yellow sweet onion for the shallot. Like other reviewers, I also added a clove of garlic. Otherwise, I prepared as directed to serve with Easter lunch. I really think the pancetta adds a lot to this recipe that you would miss by using bacon (I'm a southern girl, so bacon is a staple here and we typically use it to season vegetables). However, the pancetta has a distinctly different flavor that is subtler (allowing other flavors to shine through in this dish rather than overpowering as bacon might), and crisps up much nicer than bacon. Will share this recipe and make it again. Thanks for posting!

Quick and Easy Mexican Chicken

This recipe is fantastic as written. The end product is rich with flavor and incredibly moist - which is tough to get in a one pot boneless, skinless chicken breast dish. Compliments to the original chef!

Chicken Lo Mein

Awesome! The recipe is easy and flavorful. I'm on a low calorie diet and this was a satisfying dinnertime alternative to the salads and soups (and Subway takeout) I've been eating for dinner the last couple of weeks. Oh how I've missed Chinese takeout - not anymore, now that I can make this instead! The recipe scaled down to two servings easily (I'm only one person and hate eating leftovers more than once). The only changes I made was substituting fresh grated ginger for the ground (dry) ginger, and I also grated a clove of garlic into the marinade. This one's a keeper, for sure!

Blueberry Crumb Pie

This is a top notch berry recipe! Great for entertaining, or a last-minute dessert for a nice, casual dinner at home. I don't normally review recipes that I have altered without trying the original version first, but this time I'll make an exception because I think I still kept it intact for the most part. I didn't have a pie crust, so I just prepared this for a 9-inch square casserole dish and the portions were right. Also, I did a combo of berries from what I had on hand in the freezer - half blueberries, quarter raspberries, and a quarter blackberries. You would never guess this only took 10 minutes to put together and was made from what I just happened to have on hand to throw together at the last minute. This is definitely a keeper!
