Applesauce Raisin Cake

Reviewed: May 25, 2002
While this cake was good, it was way too heavy (for me). Plus the cooking time needed an additional 30 minutes. The consistency reminded me of a bread pudding recipe we have in the family. For now, I will continue to use my Fannie Farmer recipe. It WAS GOOD. Just didn't care for the denseness.

Apple Crisp II

Reviewed: Jan. 25, 2002
This made a very attractive desert that my husband and or dinner guest loved. (I chose to skip desert). I will make this again, it's simple and coupled with a scoop of vanilla ice cream, you can't go wrong. I only gave it three stars for "kid friendly" because my son chose to have just ice cream (typical kid?)

Baked Vegetables I

Reviewed: Jan. 25, 2002
Hmmm. My husband enjoyed this. I did not. My potatoes stuck to the pan, even with the oil on the pan. Maybe a non-stick spray would work better? The vegetables were soggy. I would have liked them to be a little more crisp. I will make this again, but not cook it as long. I did what another reviewer did and added yellow squash (in place of two of the zucchini). It is a colorful dish. I gave it 3 stars for "kid friendly" only because my son won't eat potatoes and cooked carrots. He pushed them aside but ate the rest. This would be a good dish to take to a BBQ. Make it/bake it in a disposable pan and you're there!

Gourmet Chicken Pizza

Reviewed: Jan. 25, 2002
What a great non-traditional pizza! I only gave it 4 stars for "kid friendly" because my little one would rather eat the "delivered" traditional pepperoni pizza. He did like it, though. It opens new doors for ideas...broccoli, artichoke hearts....you will really like this one.

Pork Chop and Potato Casserole

Reviewed: Jan. 25, 2002
This dish was not as good as it sounded. Using the thicker pork chops may have been the reason. Not very tasty to me. My husband said it was just "O.K.", although my little guy loved it. It continues to get super reviews, so don't let my review discourage you. Enjoy!

Salisbury Steak

Reviewed: Jan. 25, 2002
Hmm. I will have to make this again, just to see why it is getting such great reviews. It was good and my son liked it, but for myself and my husband...we gave it a 3.5 out of 5. Maybe I wasn't "hungry" enough to totally enjoy it. It's a keeper and I will make it again. I'll rate it again then.

Savory Garlic Marinated Steaks

Reviewed: Jan. 25, 2002
This is the BEST marinade I have ever tasted. Made exactly as the recipe suggested, I chose to marinate the steaks for 48 hours. Tender, JUICY with an unbelievable taste. My eight year old n loved it as did my husband and our dinner guest. I added the cayenne, and it was not too "spicy". The ingredients blended well. I gave it 5 stars for quickness (making the marinade was simple). However, it does take a bit of time to marinate. I'm sure it is just as good in less time.

Basil Chicken over Angel Hair

Reviewed: Jan. 25, 2002
This dish not only looks super, it tastes super (according to my husband and son. I don't eat pasta). The only thing I changed was using Italian seasoned tomatoes. Kid friendly but there were a few chunks of tomato left on my sons plate that had been pushed aside. This is definetly a dish to serve to guests.

Angel Chicken Pasta

Reviewed: Jan. 25, 2002
A super easy recipe to make. Appearance wise, not an "attractive" dish. Used boneless, skinless breasts. Husband and son loved it. I don't eat pasta, but the chicken and sauce was good. Will make more sauce next time.

Jamie's Cranberry Spinach Salad

Reviewed: Jan. 25, 2002
This truly was a great salad. Next time I will use bagged spinach...too long removing stems and tearing leaves. Measuring the rest of the ingredients was time consuming also. However, it was worth the end result. The dressing was awesome. An attractive dish that we all enjoyed.

Alyson's Broccoli Salad

Reviewed: Jan. 10, 2002
This salad is SO good. I made it in the afternoon and served it as a side dish for dinner. My husband and eight-year old son loved it. I do not like "raw" broccoli....too boring/bland, but this was crisp, tasty and and a nice presentation. I halved the recipe and still used a (small) "whole head" of broccoli. I did not use stems, just florets. This was just enough for four. Thanks for sharing.

Baked Ziti I

Reviewed: Jan. 8, 2002
Made this last evening. WONDERFUL! Fast, extremely tasty and a hit at home. This morning my husband said "let's not cook tonite, let's reheat last night's leftovers." Served with a salad and some red wine, perfect. May not look "presentable" to some, but when has a ziti dish ever been? Full of melting cheeses, aaah! I can't say enough. Made exactly as recipe states, although I halved the recipe (for four) and still have leftovers. I may add garlic next time. THANK YOU, Colleen, for sharing.

Black-Eyed Pea Caviar

Reviewed: Jan. 4, 2002
Abolutely wonderful. Tasty, attractive in its own way..My guests loved it over the Holidays. And the flavors only get better with time. Some chopping so parents may want to help younger kids make it.

Far East Tuna (Canapes)

Reviewed: Dec. 30, 2001
Served this over the Christmas Holiday when guests just "popped in". Easy, fast and GOOD. My intent was to serve it at our block's "tree trimming party" so I had the ingredients on hand. Kids loved it. I also tried it (as I was making it) cold, and that is just as good. The pecans add a nice texture as well as taste. Inexpensive and on hand ingredients make it a regular from now on.
