Poor Man's Chicken Fried Steak

Reviewed: Aug. 14, 2014
The kids loved it and even asked for seconds! I used ground chicken instead of hamburger and dredged in whole wheat flour instead of regular flour. I also made the gravy with lowfat milk!! I used 2 lbs of ground chicken made them into patties seasoned them with a variety of spices and pan fried them. Then cooled them, dredged them and back in the pan. I will definitely make this one again!!

Awesome! My kids and husband loved it! I dont like tough corn and this made it just perfect! I served it with ribeye steaks, and smashed potatoes and everyone had seconds. I used fresh garlic and Italian seasoning instead of oregano and it was awesome! Will definitely make it again!!!

BBQ Corn

Reviewed: Jun. 17, 2012
Next time I am going to follow my gut and take off the husks of the corn. Also not going to let them soak in the beer but rather dip them. Way too much beer flavor and the corn was not moist but still crunchy after being on the smoker for almost an hour and a half and being turned every 20 minutes.

Chocolate Pecan Pie II

Reviewed: Jun. 17, 2012
Was so not impressed with this pie. It didnt set up and the middle was all mooshy, I did it to the recipe instructions exactly and even baked it 10 minutes more to see if it would set. My husband is from the south and I make pecan pies all the time. I will definitely not be making this one again.

Plum Quick Bread

Reviewed: Oct. 4, 2011
What a great way to use up plums! My husband loved it except next time I am going to let it bake a little before putting on the coating as the top was a little too done for my tastes. But it was awesome and I will definitely be making this again!

Flan Mexicano (Mexican Flan)

Reviewed: Jun. 19, 2011
My husband is from Nicaragua and his dad makes this awesome flan and I used this recipe and my husband loved it! I dont think I am going to put the orange juice in next time as the orange was overkill and why we didnt give it 5 stars, and this makes 2 flans not just one if you use the Pampered Chef Flan pan, but I will definitely make this again!!!

Italian Peas

Reviewed: May 20, 2011
Very good in a pinch recipe..I had peas and garlic and onion and tried this. Put Parm cheese on top of them before serving and they were good..I think next time going to put some hot sauce in them for a little extra kick as they were a little bland....

Jenn's Chicken Parmesano Supreme

Reviewed: Jan. 9, 2011
Awesome recipe!! Husband said its even better than his chicken cordon bleu...I marinated the chicken with caesar dressing when I bought it and put it in a foodsaver bag and froze it and so I skipped the flour and egg and beat the chicken breast and then dredged it in bread crumbs made of cereals (great solution for cereals that dont get eaten) and then fried the filets...came out awesome, oh yes and I added salt and pepper and italian seasoning before I baked it. The Caesar makes the chicken tender and oh so flavorful!
