Grandma Johnson's Scones

We owned and operated a small drive through coffee shop for six years and used this scone recipe as the base for several variations and they were great. Variations we made were cheddar bacon, apple cinnamon, lemon ginger and cranberry orange. Using a food processor to mix and dry ingredients and to blend in the butter (cut into small chunks first) really helped cut the time needed.

Butter Pecan Ice Cream

Made this for the 4th of July. I doubled this for my countertop half gallon freezer and it fit perfectly. I used all half and half and added 1 teaspoon butter flavoring. Absolutely delicious.

Pralines

These are so easy and quick to make. Decided I would try the microwave recipe before did the stovetop one. From start to finish it takes about 20 minutes. Watch carefully when stirring and as soon as it looks like it would hold its shape, work very quickly with two spoons to spoon out the pralines. It sets up very fast once it starts to cool and you cannot reshape once it is spooned out or it looses its sheen. Made about six times for Christmas gifts and family gatherings but I only got about 14 to 20 pralines of a pretty good size.

Sopapilla Cheesecake Pie

This is wonderful! I've made it several times exactly as written. It is difficult to get the crescent roll crusts smoothed out, especially for the top. I rolled both crusts out to size on the countertop and then transferred them to the pan but they wanted to tear easily. Rave reviews but not the prettiest thing I've ever seen.

Baingan Bharta (Eggplant Curry)

I only baked the eggplant for about 15 minutes. Since it really didn't want to peel very easily I just left the peel on. The eggplant shrinks quite a bit so I used 2 medium eggplants for this. Used equal parts minced fresh garlic and ginger for ginger garlic paste. Served this with Chicken Makhani from this site. Great dinner.

Paprika Pork Chops

This combo sounded really strange but decided to try it anyway. Tasted really good but might add a little more sour cream since the topping was just a little dry. Don't skimp on the paprika.

Kickin' Collard Greens

These rock! I had never cooked collard greens before and these were a real hit. Love the subtle kick these greens have and the bacon flavor was great. Even better left over and reheated perfectly.

Grilled Spicy Lamb Burgers

I don't usually have fresh cilantro or mint so leave those out. I also add an egg to the meat and the coarsely chopped feta instead of putting feta on top. Makes four good sized burgers. Makes a good low carb main dish and i usually serve it with broiled eggplant slices that are seasoned with curry powder and paprika. Love the spice!

Chicken Makhani (Indian Butter Chicken)

This tasted fantastic. I did use a 3 pound bag of boneless, skinless chicken thighs and stretched, probably doubled, the sauce. As the chicken was browning I spooned off quite a bit of the liquid that cooked out so that it would cook a little faster and brown a bit. Used minced fresh garlic and ginger in equal proportions for the ginger garlic paste. Do not double the cornstarch as it would end up too thick. Served this with Baingan Bharta from this site as a side dish.

Flourless Chocolate Cake II

Can be made with Splenda and still taste wonderful. Be careful not to overbake. I plated slices and warmed in slightly in the microwave before serving and it was nice and fudgy. Store leftovers in the refrigerator and they keep very well.

Breakfast Pizza I

You can partially make this ahead to save time. Fry up the sausage and partially cook hash browns. Then the next morning all you have to do is spread the crescent rolls and add the toppings. Best if served warm.

Slow Cooker Guisado Verde

If use make this exactly as written it doesn't have much flavor. I added about 2 tsp of chicken flavored better than bouillon, 1/2 tsp garlic powder, chopped the rest of the bunch of cilantro and added it, found about 1/2 jar of salsa verde, about 1/3 cup of chopped jarred jalapeƱos, some chipotle lime chulula and salt to taste. Served with sour cream, shredded cheese and diced avocado. Turned out wonderful.

Oatmeal Raisin Cookies IV

Pretty average oatmeal raisin cookie by my tastes. I even made some changes to give it more flavor-more cinnamon and some ground allspice. Needs lots more raisins also.
