Tomato Basil Squares

This was really good! Didn't have fresh basil, so used dry in the crust and the sauce. No roma tomatoes in store so used a regular one and chopped fairly large. Very forgiving recipe and it was yummy for watching yhe playoffs! I used quick and easy pizza crust by chef rider and it was very good. Made it in the food processer. Can't wait to make it with the "real" stuff. Thanks, we'll be making this again for sure!

Chicken with Chipotle

this was delicious! I scraped out the seeds of 2 chipoltles and added a teaspoon of the sauce. Hubby thought is was hot, but he's quite a spice wimp! I loved it!

Slow Cooker Oats

this is fabulous! Mine was done after probably 4 hours. Didn't use the butter. Might increase the water a 1/4 cup next time. Loved this. Reheats just fine!

Roasted Beets with Feta

These were great! I don't like beets, but hubby does and wanted to try something besides boiling for an hour. I peeled and quartered them and roasted on the grill in a foil covered pan. Seasoned with olive oil and spepper. Made the dressing as per recipe and voila! I think I love beets now! Woo hoo :}

Baked Salmon II

My goodness this was great! As part of trying to eat healthier, thought we should have some salmon. I don't really care for it, but I'll eat it. This was so good, I ate all of mine and I could see hubby checking to see if I would, so he could scoop it up. No Way!! I think we'll be having salmon once a week (at least lol). Do try this one, it's great!

Berry Shortbread Dreams

Just finished making these. Thought I had a disaster. When I finished mixing the dough was SO dry and crumbly I could hardly get them to hold together to roll. When I tried to make the indent for the jelly they cracked and crumbled. I put the dough back in the stand mixer, got out my canola oil and drizzled some in while it was slowly blending. Got a fairly soft dough, and thought what the heck, let's try it. There is no change in the taste, of baked or raw dough(it's good!). Also I put my jelly in a small ziplock, cut off a tiny corner and squeezed the jelly into the impressions. Used a chapstick end to make those. Thanks for the recipe

Pesto Cheesy Chicken Rolls

These were just great! It couldn't be easier. Have made it twice now and the second time used shredded Tex Mex cheese(all I had on hand) and they were great too. I imagine almost any cheese would work. I might try just butterflying the chicken next time. Thanks for a super recipe!
