Garlic Scape Pesto

This was a good jumping off place for garlic scapes I received in CSA since I never used them before. I added some pine nuts and feel like it needed a little salt. I winged the amounts of the ingredients and ended up with 3 cups of pesto. Thanks!!

Grandmother's Buttermilk Cornbread

I thought this was pretty good! I thought it was a little sweet and I cut the sugar to 1/2 cup. I used regular flour and almond milk instead of cow. It looked a little light but the taste was great! Thanks for the recipe. Oh, I doubled the recipe and mixed everything in the pan I melted the butter in...easy!

Indian Chicken Curry II

I think this turned out pretty good although I don't have anything to compare it to as I never ate a Indian Chicken Curry before. I did take the advice of someonbe who rated 1 star and I used veg. oil. I also cook a cinn. stick and cloves in the oil prior to the onions. I also followed their tips on toasting the dry seasoning and tomato paste. Tasty...thanks!

Juicy Roasted Chicken

Absolutely nothing wrong with this recipe...simple, few ingrediants and tasty. Chicken was very moist. My chicken was 6 lbs so, I doubled everything except the butter. The bigger chicken required about 30 minutes more cooking time so I did baste it a couple times during cooking. Thanks for a good old easy recipe!

White Bean 'n' Ham Soup

I never made bean/ham soup before so, I thought this was a great jumping off place. I used stock I had made form ham hocks and the meat I got from them so, I found I really did need the salt. I also added celery, garlic, a little rosemary, some worchestire sauce and some liquid smoke. I love the creaminess the mashed beans gave it and over think this was prefect recipe for what I wanted. Thanks!!

Raspberry Chipotle Sauce

I never heard or ate this until a home product party and the organization was selling bottles of it. I loved it but figured home-made would be better. I substituted the jalapeno for a 7 oz can of chipotles in adobo sauce. Since they came whole, I gave them a chop in the mini-prep. I added the entire can (sauce and all) which gave it more spice then I was looking for so, next time I will use less. I also used red wine vinegar because that is what I had. This turned out really good! I served it over cream cheese and with salmon. YUM!!

Sauerkraut and Tomato Stew

I liked this concept so, I gave it a try. I did make some adjustment. First, I grilled the kielbasa...on that note, I may add more kielbasa next time. I didn't have stewed tomatoes so I used a 28 oz can of chopped tomatoes and 2 fresh tomatoes which were trying to go bad. I only used 2 cups of water and added an extra cup of rice (2 cups total). I really wanted this to be thick! With the liquid from the tomatoes, it worked out well. I did drain the sauerkraut. I also added basil and horseradish (thanks for the suggestion) with the tomatoes. I was really happy with the results. It was hearty and had a really nice flavor. I will probably make it again and again!

Brazilian Fish Stew

Really yummy! I was looking for a tilapia recipe and happy to find this one since I wanted something a little different. I was a little nervous about the spice but I guess the coconut milk cuts it because it was not spicy at all. I used a mix of colored peppers because I had them frozen and it was only about 2. I also cut the onion to 1. I served this with jasmine rice and like I said...YUMMY!!! It's the kind of dish when you taste, you can't wait to eat again...leftovers here I come. BTW, it will make your house smell great and the smell will linger for hours after. Thus the desire for leftovers...you may want to make double!!

Candied Chicken Breasts

This turned out really good. I think it tastes a lot like good General Taos Chicken...or good enough. I skipped the frying step and just coated/cooked with the sauce. I made it with crushed pineapple (because it was all I had) and it turned out great. DH has requested it several times. Thanks.
