Toddler Muffins

Yes, babies LOVE these! I subbed grated zucchini for the jar of squash, used half white flour and half wheat, used half whole oats and half ground flaxseed. Second time I made them, they turned out too wet even with extra oven time - probably used too much zucchini - and they're still super yummy.

Baked Lemon Chicken

I subbed olive oil for butter, used 1/2 plain breadcrumbs 1/2 panko, added lemon pepper seasoning, and upped the garlic to two cloves. Works GREAT on a rosting rack. The chicken breasts I used were rather large, and even cut into thirds needed closer to 35 minutes. Leftovers might be a bit soggy, so I'll probably eat cold tomorrow. Will repeat this one!

Mini Meatloaves

Muffin Tin version - I used 93% lean ground beef, decreased milk to 1/4 c, added half an onion (sauteed first with a dash of garlic powder and parsley flakes), and substituted bread crumbs for the oats. Cooked for 25 minutes at 350. My husband has never liked meatloaf, but now he requests this!

Coconut Pecan Chicken

Fantastic! Like others, I added sea salt and black pepper and throught they were a great part of the finished product. I did try a bit of garlic & I'll definitely leave it out next time. I put all dry ingredients in the food processor, and the fine grind made it adhere easily to the yogurt-coated chicken. Between arranging the pieces on the roasting rack, cooking, and getting it onto my plate, very little of the crust came off. I think using a rack helps tremendously - the crispiness was perfect! This is not a lot of effort for a tremendous result. LOVE!

Slow Cooker Cilantro Lime Chicken

Easy and reliable slow cooker recipe. I halved it. Added a can of drained/rinsed black beans. Could have used more cilantro - I could barely taste it and I thought I put in a bit extra. Low setting for 6 hours was enough time for my cooker. Next time will try with rice. Super versatile!

Purple Monstrosity Fruit Smoothie

I am so happy to see a blueberry/banana smoothie that doesn't involve milk/yogurt! I chose to add applesauce (natural, without sugar kind). I used OJ to help the mix be more fluid, but used less than called for b/c of the applesauce. Definitly not too tangy! I used the optional honey and honestly though it ended up just a tad too sweet - will lessen next time. I had the vanilla on standby in case it needed more flavor, but didn't end up using it. This smoothie is very yummy and also really pretty!

Sweet Potato Chicken Casserole

I prepared 2 servings. Left out the cream and white wine. I added one diced apple and 2 more carrots. I also increased the garlic to 2 cloves and it wasn't a bit overpowering. As other reviewers did, I added some spices - generous shake of pumpkin pie spice (cinnamon, ginger and nutmeg). By leaving out some of the liquid ingredients, I ended up with just a little nice sauce at the bottom. Adding the apple really mellows the taste of the chicken broth. We ate it all on its own; no rice or bread. Great fall recipe. My husband and I really loved it! With extra veggies & fruit and without the cream, it feels healthy too!
