Eggless Tofu Spinach Quiche

Five stars as revised, based on input from other commenters. My husband--who loves quiche--said this was THE BEST quiche he has ever eaten--hands down! Here's what I did: I used a 16 oz. block of extra-firm tofu, rinsed & drained. 2x the amount of milk to 2/3 c., added extra onion, 1 pkg. sliced mushrooms and a small piece of red bell pepper. I sautéed the mushrooms with the onion and 1-1/2 tsp minced garlic in a tbsp of olive oil. I added garlic powder, a pinch of cayenne, red pepper flakes and 1/2 tsp dry mustard, extra salt and white pepper. Also--sliced sweet potato with mandolin slicer and added that to my olive-oil sprayed pie plate for the crust. I used all of the spinach called for, making sure to squeeze out all of the moisture I could. I baked it for about 45 min. at 350 and let it sit on the counter to cool and set for about 10 minutes. FABULOUS! And the sweet potato crust rocks!

Perfect Ten Baked Cod

Have made this twice now, once for just myself and thought my husband would love this, so I fixed it again tonight and I was right, he loved it! I don't use the green onion--never have it on hand--but otherwise followed the recipe exactly. Next time, for simplicity-sake, I'm going to follow the suggestion of other reviewers and skip the two step process. Really good recipe...thanks for sharing, Pam!

Rush Hour Refried Beans

For a healthier option, I do this: pour half the beans and about half the liquid into a blender, add about 2 tsp. of olive oil, cumin, garlic and dried onion. Blend until smooth. Add the rest of the beans and blend real quick until mashed a bit but so you still have chunks. Transfer all from blender into microwaveable dish using a spatula, top with jack cheese and heat through until beans are hot and bubbly and cheese is melted.

Bacon Cheese Puffs

Had something similar years ago, but instead of bacon, flaked crab or chopped cooked shrimp were added. As I recall, they were delicious and, up till now, I had been unable to locate a recipe for them. Can't wait to try it.

Candied Yams

I make it with fresh yams, peeled, chopped, topped with butter and brown sugar then microwaved until yams are tender. I top with full sized Jet Puffed marshmallows--as many as I can stuff on top of the yams and just before serving I place under the broiler and toast the marshmallows so they get very brown and toasty on the outside and soft and gooey on the inside...tastes exactly like campfire marshmallows. Our kids all love these yams...it's the only dish at the holidays with no leftovers. One year I even went a bit too far and the marshmallows caught fire...blew it out and served them and everyone went nuts and wanted me to start doing them that way from now on. I don't though, because I'm afraid it's carcinogenic. Great way to cook yams!

Easy Chicken Taquitos

This is a really, really good recipe. And super easy. I use the Tyson southwestern grilled chicken strips, chopped finely before adding the cheese. Then, for the tortillas, per another reviewer's suggestion, microwave two at a time in a damp paper towel for 30 seconds. Then, lightly spray with olive oil cooking spray on both sides before stuffing and rolling. Also, spray the tops well once again, after rolling before baking. OMG these are soooo much better than the frozen ones! I serve for dinner with a dollop each of Wholly Guacamole, Fage 0% and medium fresh chunky salsa. My hubby LOVES these!

Salmon Chowder

I followed recipe EXCEPT: I used skim milk and then thickened the soup with cornstarch (didn't have evap on hand); added a splash of sherry; used 2 14.75 oz. cans of creamed corn instead of just one; used about 3/4 c. cheese; added liquid smoke, red pepper flakes and a bit of tobacco--all to taste; and I used a frozen salmon fillet that I added last and cooked about 5-7 minutes until salmon broke apart easily. Served with fresh French bread and a spinach salad. DEE-licious! My hubby isn't a fan of salmon but I have NO trouble getting him to eat this!

Zucchini and Eggs

This is a good recipe but here's how to improve on it: saute 1/4 cup chopped white onion with the zucchini. The onion imparts a (just slightly) sweetness to the zucchini that keeps it from being bitter.

Grilled Garlic Parmesan Zucchini

Love this! First had it when my sister made it on her grill--delicious. And, I noticed another reviewer remarked that they thought this recipe, while very good, was "missing something." Well here it is: my sister heats up a little marinara sauce and serves in a bowl with a spoon for everyone to drizzle over the zucchini as they desire--fabulous touch!

Rich and Creamy Beef Stroganoff

Definitely 5-star! I've never been a huge fan of stroganoff--it was always something my mom made as something to do with leftover Sunday roast, so I have used it the same way. And, for me, it's always been somewhat "ho-hum." But this? Wow...I just made it with some leftover meat and my husband and I were practically liking our plates! I can't wait to make it fresh, with all fresh ingredients. I also used canned mushrooms 'cause that's all I hand on hand. If this only gets better with fresh, marinated beef as well as fresh mushrooms I CAN'T WAIT to make it again. Thank you very much for this recipe SanFranCook!

Polish Meat and Potatoes

Classic dish of sausage and peppers. Try this for something similar, but better: Par-cook potatoes in microwave 'til slightly tender. Then, add everything to a large piece of heavy-duty foil. Instead of oil, dot with several pieces of healthy margarine (i.e. Promise or Smart Balance). Add 1 large fresh tomato, chopped and pour over all of this a cooking liquid of: low-sodium chicken broth mixed 50/50 with vermouth. (About 1/2 cup of liquid for 3 or 4 servings.) Seal up the foil pouch and place on outdoor grill on medium-high heat for about 20 minutes. Add 1/2# (for 3-4 svgs.) of frozen, cleaned, shell and tails-on large shrimp. Re-seal foil and cook about 7 minutes 'til shrimp are pink and cooked through and veggies are tender. Serve in bowls with liquid and sop up with some crusty french bread. Yummy...

Spinach Lentil Soup

Good, but I like it better with some changes I made: I used 6 c. low-sodium broth + 1.75 c. water + 1/4 c. sherry. Added 1/2 tsp. garlic powder and used brown rice instead of white. Added the raw brown rice with the lentils and pureed about 1 c. of soup to thicken before adding spinach. Also used kale in place of the spinach, because I had it on hand to use up. Awesome with crusty french bread and a salad...

Very good side dish. I served this along with some fresh green beans seasoned with a teeny bit of sesame oil, some garlic, salt and some ginger with the Tasty Sesame Tilapia recipe on this site...wonderfully easy, and super delicious meal.

Tangy Apple Chicken Loaf

FABULOUS recipe! I followed it almost to the letter, but I didn't have poultry seasoning so I used some extra sage, tarragon leaves and a little garlic and it worked fine. Next time I'm at the store I'll grab poultry seasoning to see if it could possibly be even better with, since this is going to be a regular at our house--my husband LOVED it. I also used oatmeal instead of bread crumbs, as another reviewer had, but instead of 1/2 c. I ended up using 1 cup because the mixture was way too wet to form into a loaf with just the 1/2 cup. (Maybe if I'd used bread crumbs the 1/2 cup would've worked better.) Served it with some smashed potatoes, peas and jellied cranberry sauce...mmmm! Hubby can't wait to try the leftovers in a sandwich tomorrow.
