Chicken Fried Chicken

This was my first time making fried chicken and it was incredible! Juicy on the inside and crunchy on the outside---cooked to perfection. Changes I made: added paprika, garlic salt, onion powder, seasoning salt to the bread crumb mixture. Also, used oyster crackers instead of saltines. Tons of flavor!

Angie's Dad's Best Cabbage Coleslaw

Light, refreshing summer salad. I would let the mixture sit for a day, as it was a little crispier than I'd have liked. excellent alternative to a heavy mayo-based slaw. Used a lot less sugar and subbed olive oil. Forgot all about the mustard but didn't need it!

Creamy Tomato-Basil Soup

Used canned whole tomatos, added garlic, didn't have fresh basil so used dried basil, added spinach at the end for texture before pureeing. Fabulous for my sick hubby!

Alfredo Light

Delicious! I didn't follow the recipe to a T-- Just tasted as I went and made adjustments as needed. Didn't have vegetable broth but didn't need it, as the milk was enough liquid and added basil + more garlic for flavor. After it started to thicken I turned off the heat and let it sit for 5 minutes, which helped thicken more. The man LOVED IT--gobbled it up! Perfect with spinach, broccoli and asparagus. Will add white beans next time to round out the meal.

Blue Corn Breakfast Taco

Delicious and nutritious! Used spicy roasted red pepper sauce instead of pico de gallo. Also cooked eggs, beans, and spinach on the same pan to speed up cooking. Ready in 5-7 minutes.

Easy Chinese Corn Soup

Tofu Tacos I

Great flavor, too mushy/liquidy. I would probably use veggie crumbles next time instead of tofu, or toss the tofu in flour to give it a crispier texture.

Butternut Squash Pizzas with Rosemary

This pizza was delicious! A few things: -boil butternut squash for a few minutes to make chopping/peeling easier before putting it in the oven. -adding tons of olive oil and garlic to the pizza crust is a must -added feta cheese crumbles to kick it up a notch Next time, I'm going to make a creamy sauce out of cream, melted asiago, garlic and onion for the base to build some flavor.

Homemade Black Bean Veggie Burgers

This was delicious! Followed the recipe exactly except used red beans instead of black beans and it turned out perfect--no falling apart and not dry. Melted feta cheese over it and topped that with avocado, tomato, parsley, and spinach. I want to make these into little bite-sized balls instead of patties and bake them in the oven to be served as an appetizer with crackers and chipotle mayo or sweet chili--that'd be to die for!

Wild Rice Casserole I

I loved this dish! Used Mozzarella cheese, 1/2 the butter, and used a blend of plain basmati rice and plain wild rice. Sprinkled some garlic salt on the top in the last 20 minutes.
