Easy Butternut Squash Ravioli
I usually love Chef John's recipes, but this just did not turn out for me. I made it to a T, but the wonton wrappers just didn't work. The first batch the wrappers were clearly too thin, no bite to them and if they stuck to the pot even slightly the wrappers tore. Then, I tried wetting 2 wrappers together, and doubling the thickness, but the texture of the pasta was just too chewy. Maybe a different brand or something would work, cause the filling was pretty good.

Spiced Sweet Roasted Red Pepper Hummus
Excellent. Last time I made homemade red pepper hummus it just did not turn out, I'm glad I gave it a second chance. I made a couple of slight changes, decreased the lemon juice and added some olive oil, increased the garlic and decreased the cayenne, and it was near perfect. I've tried roasting my own peppers and I think buying the jar was worth it. I got a 12oz jar for a reasonable price, and this recipe only called for 4oz so I have enough to make this 2 more times!

Chewy Coconut Cookies
I loved it! The name gives it away as a chewy cookie. With only one egg, only butter no shortening, and splitting the sugar between brown and white, it will always result in a thinner, chewy, yet crispy cookie. I used a cookie scoop so I had to bake mine a bit longer (about 12-13 min) but other than that this recipe is great as is. Next time I might try adding nuts or chocolate chips for variety, but that's about it.
