Chewy Coconut Cookies
I don't understand the reviewers who were unhappy with the recipe as written, I loved it! The name gives it away as a chewy cookie. With only one egg, only butter no shortening, and splitting the sugar between brown and white, it will always result in a thinner, chewy, yet crispy cookie. I used a cookie scoop so I had to bake mine a bit longer (about 12-13 min) but other than that this recipe is great as is. Next time I might try adding nuts or chocolate chips for variety, but that's about it.

Chef John's Pita Bread
Great basic recipe, but the directions need to be tweaked. DO NOT heat your pan to med high and put oil in it, you will burn your pita bread before it is fully cooked and will never get to the stage where it puffs up (this happened to me). Instead, medium heat worked just fine with next to no oil in the pan. I recommend using no oil or just using a non-stick spray. Otherwise, the dough recipe is GREAT. If the instructions had worked as written this would have been 5 stars.

Chocolate Covered Orange Balls
I was a little skeptical about these at first, but they were a huge hit at Christmas. I will say though, these balls a decadent and very sweet I followed the recipe pretty much exactly. When it came to dipping the balls in chocolate I let some dry according to the recipe and froze other balls since I had used that technique when making peanut butter balls. Surprisingly, the dried balls were actually easier to dip.
