Sweet Mustard Chicken Bake

To make it healthier, I omitted the butter all together. I eyeballed the other ingredients, dipped the chicken, then dipped it in panko crumbs. I drizzled the remaining sauce over the chicken. No need to baste with the crumbs. I also used 8 chicken breast halves. So easy, tender, and tasty!

Slow Cooker Chicken Taco Soup

Loved it! Very easy and delicious. I made the following substitutions due to not having some ingredients on hand: used chicken broth instead of beer, used 6oz tomato paste instead of tomato sauce, used 28oz crushed tomatoes instead of the suggested tomatoes, used onion powder instead of onions. The 3 toppings suggested make it extra good. I will definitely make this again!

Frozen Chocolate Chip Cookie Dough Balls

Yum! To be healthier, I used 1/2 cup butter and 1/4 cup applesauce (no sugar added applesauce) instead of the 1 c butter.

Comforting Chicken

5 stars for the ease of making and the great taste! Very well seasoned and not your normal chicken casserole flavor. I used EVOO instead of vegetable oil and omitted the butter when browning the chicken cubes (I used a little over 1 lb of chicken), and used onion powder instead of the onions. I also omitted the green peppers due to an allergy in the family. I used cream of potato soup and this worked well (we also have a soy allergy in the family and cream of potato is the only canned cream soup I can find without soy protein, so I use this for all cream soups in my cooking). Next time I might try to just throw everything together and then bake it without first browning the chicken...hopefully that will work!

Veronica's Apple Pancakes

Very good! I substituted applesauce for the butter, and used whole wheat flour and 1/2 tsp cinnamon as suggested in other reviews. I used one granny smith apple shredded. The batter was a little thicker than other pancake batter that I was used to, but it turned out fine. Also good served with chocolate chips and fruit syrup!

Orzo with Parmesan and Basil

Delicious! This is a perfect summer side dish because it is so light and fresh tasting. Will definitely make again. It is also very easy. I often used dried herbs in recipes, but I would definitely recommend using the fresh basil in this recipe. I used EVOO instead of the butter.

Very delicious! Excellent, unique sweet & tangy taste. Loved it! I omitted the mint because I didn't have any, substituted chicken broth for the white wine, and used about 6 chicken breast halves. Will definitely make again!

Weeknight Pork Chops

I didn't have strawberry jelly, so I used half raspberry preserves and half grape jelly, and it tasted great. I also used 1/4 tsp ground mustard for a double recipe of sauce instead of regular mustard since I didn't have any. I used 3/4" boneless pork chops...browned 2 minutes on each side and turned down to medium to cook for the 10 minutes. I also just mixed the sauce ingredients, then poured some over the chops while cooking, and spooned some on top before serving. I did turn the chops during the last minute or two so they would cook evenly. Tasted great...very easy, sweet, and tender.

Peanut Butter Cupcakes

Very delicious and unique cupcake! I substituted creamy almond butter for the peanut butter due to my husband's peanut allergies, and it tasted great. I also used 1/4 c apple sauce and 1/4 c canola oil for the shortening as others had suggested, as well as 1.5 tsp lemon juice to the batter instead of cream of tartar (which I didn't have). Tastes great with whole wheat flour if you prefer. I sprinkled the cupcakes with powdered sugar and it was a very tasty dessert. Will definitely make again, and I will probably try it with chocolate icing or glaze as others have suggested! I used cooking spray instead of greasing/flouring or using liners, and the cupcakes came out easily.
