Mimi's Zucchini Pie

Delicious!! Sliced veggies very thin to help cook thoroughly, added almost 1/2 cup of finely diced onion just because i love onion. I was looking for something light as i hate heavy foods in the summer/heat and this was a perfect meal, thank for the recipe!

Lemon Bread

The 1st loaf disappeared in less than 12hours... i had to make a 2nd loaf the next day... that lasted all of 2hrs. Followed many other reviewers, used the juice of 2 fresh lemons, not measured out, just used it all & the zest of one lemon, not measured out, just used all. EXCELLENT recipe

Lemon Butter Cookies

Yummy cookie, just seemed like a lot time went into making these with very few cookies yielded from the process. I added 1/2 lemon extract to the mix, very subtle lemon flavor.

Pasta Fagioli

Didn't change, and this recipe was fantastic! My fiance gobbled it up & took some for lunch today too! Had no celery on hand, don't think i would have added anyway, not a big fan. i Finely chopped the onion, used about 20oz total of Chick.broth. Used 1 full cup of uncooked Ditalini pasta. Added 1 uncooked/chopped up chick. breast at the same time i added the pasta. Used a 19.5oz can of beans, liquid and all, needed the liquid(which i added when i added the pasta) to balance the extra pasta used. Last 10mins when i added the beans, i also added about 4cups of fresh spinach. DELISH!!! will be making this again & again & again! Thanks Star!

Stuffed Cabbage Rolls

This was my first attempt at stuffed cabbage. I think i will try the longer way next time, just for practice but, this recipe was really good. I used 3/4 cups rice, 12 cabbage leaves, 1/2 cup finely chopped onion, and used about 1/2 cup of tomato sauce(instead of soup)in the meat mixture. I also made the sauce that another reviewer had posted, and it was the perfect sauce for this dish... "I do make a different sauce. After all the work of making homemade stuffed cabbage rolls, I find it hard to pour tomato soup on top. For one pound of meat, I mix an 8oz. can of tomato sauce, 1 Tablespoon brown sugar, 1 Tablespoon lemon juice and 1 teaspoon worcestershire sauce. I mix well and pour over cabbage rolls." I also added about 1/4cup of organic ketchup to this sauce. My mother in law to be makes fantastic stuffed cabbage, so i have big shoes to fill, my fiance thoroughly enjoyed this meal.

Best Fried Green Tomatoes

Wonderful, easy recipe. I've tried making FGT several times, but never by a recipe, but i found some perfect tomatoes in the farmers yesterday and knew i had to come here and find a good recipe, well this was it!! Didn't change much about the recipe except for adding 1/2 parmesan/romano to the breading portion of the recipe. They were fantastic, my fiance said he'd help with the frying, he sure did, taking them from the fryer to his belly! I only bought 2 large tomatoes so we didn't have much, but i will surely be getting more tomatoes this week, fantastic! Sprinkled with Garlic pepper grinder when first removed from the oil, besides that, nothing needed to be adjusted, just YUM!!

Chicken Scampi II

Oh YUMM!! What a delicious and simple dish! I especially enjoyed this recipe as i keep a kosher home and it's often times hard to find such a yummy recipe without having to make too many changes and keep it kosher. Like many others, i took the time a read through all the comments, and tweaked the recipe slightly. Used 5-6 large garlic cloves, I halved the margarine(but then added addtl. 1 Tbs) & 1tsp of Wondra(to thicken a bit) during the last couple minutes of simmering. In addition, i added 1/4cup of chardonnay at the same time i added the lemon juice, which i also doubled to 2 Tbs. Also, after the initial sauteing of the chicken was done, i added 1 plum tomato(halved, seeded, sliced length wise), 1/2 of one red onion, sliced thinly, length wise) and 1/2 bag of fresh spinach during the last five mins. of cooking. The only other change i made was the chicken itself, i cut each breast into smaller strips instead of just thirding them. It was a wonderful dish, and my fiance gave it 2 thumbs up and said he'd be happy to eat it again anytime!!

Cashew Crusted Chicken

Very easy to make and very delicious also nice a light, didn't feel guilty for cleaning my plate or to heavy. Only thing i changed was i used about 2 cups of cashews and i crushed them instead of course chop, added any remaining back to the sauce for use with serving. YUM YUM YUM!!
