High Temperature Eye-of-Round Roast

This came out perfect based on the other reviews. Preheat the oven at 500 for 20 min.so it gets the oven nice and hot. I rubbed the roast with a combination of salt, pepper, garlic powder, paprika and thyme. Place it on a roasting rack in a shallow roasting pan FAT SIDE OF ROAST UP! VERY IMPORTANT. AS THE FAT MELTS IT BASTES THE ROAST! Cook for 7 min. per pound then turn off the oven and leave in for 20 min. per pound. DO NOT OPEN THE DOOR TO PEEK AT THE ROAST. When timer goes off remove from oven AND LET THE ROAST REST FOR 20 MIN. Perfect crispy crust and tender juicy meat. It made a delicious sauce as well.

Cranberry Orange Loaf

This is the best cranberry bread I have ever tasted. The dough is very dense, so add an extra 20 minutes to your cooking time.

Tomato and Basil Quiche

Swiss Chicken Casserole I

I have made this for years. If you have thick boneless chicken it does take longer than 50 minutes. I bake at 60 mins then uncovered for 20. I have used different cream of' soups and they all taste great'!

Fall French Onion Soup

This was really good. I didn't use a slow cooker. I cooked the onions (4 large)in a stick of butter over med-high heat for about 10 minutes, then I added the brandy, let it cook down a minute and added 2 tbsp of flour. I let it cook off for a minute then added the stock and cider. It really did need a bit of salt and pepper to flavor it. The cinnamon on the bread was really good. Thanks!

Spinach Tomato Tortellini

This was really good. I did wind up using frozen spinach that I thawed and drained due to the spinach recall. I did have to season a bit more than called for as it was a bit bland, but it was really good. My picky kids loved it. Thanks!

Chicken Milano

This was great! Definately use thin chicken or chicken tenders, otherwise it takes too long. I started the chicken, sauce and pasta at the same time. I also used an entire box of fettucine and doubled the sauce as the pasta just absorbed it! Thanks for sharing! I will definately make this over and over.

Homemade Refrigerator Pickles

Made these today....yuuuummmmmmy!! I used 6 large cucumbers, 1 large vidalia and 2 green peppers. I added 2 tbsp mustard seed and 1 tbsp celery seed to the mix. One thing you need to know, the cucumbers really reduce down once they have sat in the vinegar. I filled jars and processd them in a hot water bath, and when they came out the jars were only half full. I would let the mixture sit in the bowl for at least 2 hours and then fill your jars if you are going to process them. Thanks for the great recipe!!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

This was delicious. I bought 2 1.5lb pork loins and used the exact amounts for the sauce and stuffing. I cooked them at 250 for about 90 mins and then turned up the heat to 425 for about 25 minutes. I removed them when they registered 150 degrees and they were fantastic!!!!

French Dip Sandwiches

The sauce on this was fantastic with a few changes. I used 1/2 c soy mixed with 1 c beef broth. I chopped up 6 cloves of garlic and also added 1/2 envelope of italian dressing mix. I put it all in the cooker over high for 4.5 hours. I sliced it up thin and let it soak up the sauce for a few and it was AMAZING!!

Chicken Pot Pie II

This was great. I simmered the chicken in 2 1/2 c chicken broth (enough to cover) and added thyme and sage to the broth. I then used 2 c of this broth and added 1/2 cup half and half to it to thicken the sauce. I used 2 crusts, and cooked it maybe 10 minutes longer. It was delicious!!

Grilled Salmon I

This was really yummy. I didn't have lemon pepper so I seasoned this with salt, pepper, garlic powder and lemon zest. I hit it with a little fresh lemon juice when it came off the grill and it was really good!

Amazing Italian Lemon Butter Chicken

This was insanely delicious! I took boneless chicken breasts and cut them into bite size pieces before cooking. I put the flour in a large bag and shook the chicken in it. I also cut 6 pieces of bacon into small pieces before cooking with the capers and artichoke hearts. I was leery of all the butter but do not skimp!! This is one of the best recipes I have tried on here and it makes alot!!

Homestyle Turkey, the Michigander Way

This was really good. I didn't have minced onion so I used a small minced yellow onion. I used a whole stick of butter under the skin and it was very moist. I added 2 tbsp cornstarch dissolved in 1/4 c cold water and extra water to make about 4 cups to the pan drippings and it made delicious gravy. Yum!

Brown Sugar Meatloaf

Wow, this was amazingly tasty! I didn't have saltines, so I used crushed Ritz crackers, and I added some cubed Cheddar cheese to the mix. I put the sugar and kethup mix on the top and it was fantastic!!
