Banana Frittata

Mmmmm- this is such a great idea! Made some changes though: Halved recipe; used "eggbeaters"; a little less sugar and a little more salt; 3/4 of an overripe banana, thinly sliced; added a handful of diced walnuts. I cooked it- covered- in a small skillet with NO oil, just brushed with butter, over medium-low heat. Dusted w/powdered sugar. YUMMY- excellent flavor! Thanks for sharing the recipe.

Hershey's ® Chocolate Mousse

I'm undecided on this recipe; great texture, but too sweet as written. Using an electric mixer does produce a very light, fluffy mousse. It is also quite rich, but far too sweet for my taste. I even cut the sugar (based on a previous review)... I have not given up on this recipe, but next time I will cut the sugar to 1/3c at most...

Light and Fluffy Spinach Quiche

I made this quiche last weekend for brunch. I used low-fat mayo, a little less cheese, and more onion. I also added some bacon-flavored bits. It was delicious. I cut the leftovers into slices and froze them. This quiche freezes beautifully- I've taken out two pieces so far, microwaved them to defrost, then reheated in the oven. You would NEVER know they're leftovers! Thanks for this recipe-

Beth's Spicy Oatmeal Raisin Cookies

Like others, I modified Beth's recipe a little, and thanks to the fabulous base of ingredients/proportions, these cookies turned out beautifully. I only had quick oats, used regular shortening, and used 1/4 tsp each of cloves and nutmeg. Maybe because of the different oats, my cookies spread quite thin, but retained the perfect crispy edged/chewy inside texture. GREAT RECIPE- thanks!

Tiramisu II

I made this tiramisu for a family/friend get-together, where there were more than a few "food snobs". It was such a HUGE hit, I was asked to make this every year as a new menu staple. Relatively easy preparation, attractive presentation, and DELICIOUS! Thanks for the recipe!
