I am very impressed by this soup. I wasn't sure how it was going to turn out due to the mixed reviews, but it's one of the best soups I've ever made! I did make a few small changes to the recipe- used hot Italian sausage, added one medium leek, kept the skin on the potatoes (to add a rustic texture, plus nutrition), and I added about 2 teaspoons of chili powder to bring up the spice a little more. Also, I reduced the amount of chicken broth (only 2 cups) and simmered it a little longer (about a half hour) in order to thicken it up. Overall, a great recipe that will be no stranger in our household!
