Pesto Pasta

This is another one of my favorite, most often used recipes. Based on other reviews I make the following modifications: Saute chopped onion (between 1/2 and whole onion) and 3 cloves of minced garlic in olive oil first. Add sun dried tomatoes, sometimes chopped black olives, then the pesto, which i up to 3 or 4 TB. I also add a couple healthy pinches of red pepper flakes (most important!) and add the parmesan just before serving. Thank you for a wonderful recipe!

Atomic Tuna Salad

Thank you! I would never have thought to use broccoli in my tuna salad. I nixed the cauliflower and celery and added some red pepper flakes. Since I always use celery with tuna and it is such a strong flavor, I just went broc all the way. Husband AND three-year-old loved it! Boy ate by the spoonful and didn't realize he was eating broc. Husband and I had it on fresh deli burger buns. yay!

Best Black Beans

I feel guilty because I've been making this recipe at least weekly for almost two years and have never reviewed it. I just think it is magical how one can turn a simple can of black beans into such perfection! Based on other reviews, I made the following modifications: saute the onions and garlic in oil before adding the other ingredients. when I have it, I use fresh coconut oil to saute, which adds a nice Caribbean feel to it. Thank you so much for this recipe! I can't believe I lived without it.

Quick Pasta Sauce

after finding this recipe last year, i don't buy sauce anymore. i read all the reviews and added the most recommended modifications: 1 tsp sugar, a TB of tomato paste, another tsp or two of dried basil and a hefty pinch of crushed red pepper flakes. wonderful! so simple, yet so good. oh, and they don't have crushed tomatoes on the island where i live, so i just squish canned whole, peeled tomatoes. my three-year-old loves to assist with this part!

Pat's Potato Salad

this is the best potato salad i've ever made! i made some minor changes and additions, but the base recipe was pretty much the same. i was making a batch for two, so i just kinda winged it with the amounts, trying to keep the ratios similar. i used regular white potatoes, because that is what i had, and didn't use sour cream because i didn't have it. added boiled eggs and carrots, as well as chopped dill pickles. seriously fabulous! i bet with the sour cream it would be freaking amazing...
