Thai Chicken Spring Rolls

This was just like the real thing! I didn't have watercress, so I used chard instead. You could probably use lettuce, spinach, or any leafy green. I paired this with Indonesian satay.

Classic Pad Thai

This was terrific! Not exactly pad Thai but it definitely has that flavor. It's easy and so much less expensive than using jarred pad Thai sauce. We added chili garlic paste to spice it up a little, but other than that, made the recipe as written. Excellent!

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

This was superb! I did make a couple of changes. Roasted the Brussels sprouts and some diced potatoes along with the garlic. Used 1/2 c soy milk in place of the cream. The sauce added a really nice subtle flavor. Yum!

Confetti Chowder

This was very good. It did need a little more flavor for my family's taste. I took the advice of other reviewers & added 3 cloves minced fresh garlic, 1T herbs de Provence and a couple shakes of red pepper flakes. Wonderful!

Potato Squash Casserole

This is a keeper. The whole family loved it. I rated 4 stars because I made a couple of changes. I made a white sauce instead of using the milk & flour - I just have never had luck with au gratins made that way. I also used veggie sausage crumbles (Morningstar Farms brand) instead of the real thing.

Brazilian Fish Stew

This was delicious. My entire family enjoyed it - even the ones who "don't eat fish." I did add a little hot spice to it at the end but that is just our preference; this was excellent as written.

Crispy Eggplant with Spicy Tomato Sauce

Sausage-Stuffed Squash

Very easy and tasty! I made this with veggie sausage crumbles, I think next time I will add some chopped apples to counter the spiciness of the sausage but we all enjoyed this recipe as written.
