Best Chocolate Chip Cookies

Excellent cookies - crispy around edges, and chewy in the middle. Cut sugar a bit (1/2 cup white sugar, 1 cup brown), and upped salt to 1 tsp. In order for 12 minute cookie: make into approx. 1 1/2 inch rounds, with about 1 inch between.

One Bowl Chocolate Cake III

SO MOIST AND PERFECTLY CHOCOLATEY! Changes made thanks to other reviewers: Up cocoa to 1 cup, 1/4 cup melted butter and 1/4 cup oil, and added 1 1/2 tsp instant coffee to boiling water before mixing in, baked in a 9x13 pan. Was looking to fill a late-night chocolate craving. This and the Rich Chocolate Frosting (8 servings) were perfect. UPDATE: currently making cupcakes for my niece's 2nd birthday (no coffee this time), and for all the cupcake decorators out there, filled to 3/4 you end up with a heftily domed cupcake - more of a muffin shape. Will fill to 1/2 next time.

Spinach-Stuffed Salmon Fillets

I had no tomatoes on hand at all, so I cut up some red pepper in small rough squares, still fantastic! To stuff the fillets, I found it a lot easier to stuff little by little and stretch the fish over the stuffing. I got so much spinach in that way! No left overs.

Jamie's Cranberry Spinach Salad

My go-to salad whenever I have a crowd to wow. I find the dressing to be a LOT. The dressing makes the spinach pretty soggy, so pour on very little at a time, mix in well and stop when it looks okay coated, you can always offer your guests extra dressing. I skip the poppy seeds, toast either sliced almonds or pine nuts (whatever I have on hand), and if I can I like to do some nice goat's cheese and canned mandarin oranges... yum! Make sure to toss the dressing in very slowly first, then throw all the goodies on top or else they all fall to the bottom~ enjoy!

Simple 'N' Delicious Chocolate Cake

Delicious Moist Cupcakes! Not too sweet but still flavourful with a good frosting. I used one and a half long shots of espresso with the rest water to make one cup. That may have made them a bit more bitter, that's why the frosting made a big difference too. But I will use espresso next time again! - I will let the espresso cool a bit though. Stayed fresh in the fridge for days - gave some to my sister three days after baking and she said they tasted fresher than the ones at the cupcake store!

Creamy Chocolate Frosting

SO good! I used 2% milk instead of the evaporated milk as one reviewer mentioned and it was really good. I made this all by hand (no blender) and it was still really easy. Kept in the fridge, it was still good 3 days later to frost cupcakes and eat!

Brooke's Best Bombshell Brownies

Excellent Brownies! Chewy and chocolate-y. I overcooked them slightly because my toothpick didn't come out clean even at 45 mins. I think next time I'll do 40 mins and not worry about the toothpick test. 30 seconds in the microwave for the butter was perfect. I ran out of butter last time and substituted the rest with yogurt (had vanilla yogurt on hand) and used half whole wheat flour and they tasted great. Going to make them for a school bake sale now, exactly as the recipe calls, I'm confident they will turn out super! Thanks Brooke!

Chewy Brownie Cookies

I made these cookies about a year ago for a bake sale... they came out very flat, and the flavour wasn't great - kinda flat also. I used the butter as suggested by other users, maybe that's where it went wrong.

Janet's Rich Banana Bread

Wonderful banana bread. Made as-is is really foolproof. However after a few tries, I switched to vanilla yogurt (because I the rest will not go to waste), and in doing so i cut down the sugar. to 1/4 cup white and 1/3 cup brown, and use a tiny bit less of the vanilla. And I always do the 1/2 cup semi-sweet chocolate chips, 1/2 cup chopped walnuts, and 2 mashed bananas. I cut it up and pack them individually so it's easy to grab and go.
