Chinese Chicken Fried Rice I

Reviewed: Jan. 3, 2012
Turned out great. I seasoned the chicken with garlic and onion powder, salt and pepper like another reviewer recommended. I cooked the chicken in a little bit of olive oil and added the sesame oil at the end before adding the egg and 1/3 cup of soy. I have been told that sesame oil loses its flavor if you cook it at a high temp so that is why I added it at the end to maintain the flavor. I used random veggies in my fridge, broccoli, green onion, yellow pepper and a chopped jalepeno for heat. I also added a 1/2 TBSP of chili oil to make it spicy. I used brown rice for the health factor. It really turned out great and is a good base recipe.

Yummy Lemon Salmon Burgers

Reviewed: Jun. 26, 2011
These were better than the way I had been making mine. Thjs is how I modified to where it makes two patties. I used 1 6oz can wild alaskan salmon, then I used one egg white, 3TBSP fresh parsley, 3 TBSP breadcrumbs, I did 3/4TBP minced onion, 3/4 TBSP lemon juice, 1/4 tsp dried basil and the pinch of red pepper flakes. Then I baked in the oven per another reviewers instructions to cut out the oil. They were awesome. I made a spicy garlic aioli instead of the lemon mayo listed.

I made these and accidentally forgot the orange juice, but they were great! I am bagging them up to hand out as holiday gifts.

French Breakfast Puffs

Reviewed: Oct. 17, 2010
I made this recipe exactly as described except I added a teaspoon of cinnamon to the mix. I made these instead of making french toast for breakfast and it was so much easier. I baked these in aluminum foil cupcake holders. When they came out of the oven, I poked holes throughout the muffins and instead of dipping the tops, I drizzled the topping over each puff with a spoon so the topping seeped into the muffin as well. They came out absolutely fabulous! I served them with agave syrup and also a apricot jam/cream cheese spread. Great recipe!
