About this Cook
My mother first taught me to "cook" when I was old enough to stand on a stool and stir Jello. By the time we were in junior high school, my sister and I were making full dinners for the family. I love to cook and bake all kinds of food -- from comfort food to more complicated recipes. When I'm not in the kitchen, you can usually find me reading or spending time with my kids. Like many who love cooking, I like to read new cookbooks from start to finish in one sitting.

My favorite family cooking traditions
Making spaghetti sauce from scratch, learned at a young age and making our family's favorite tacos although I have never found anyone else that makes them the way we do. I'm not particularly fond of making Christmas cookies, but do so to get the kids involved with me in the kitchen.
My cooking triumphs
I look upon any successful cooking project, no matter how simple or complex as a triumph. I'm especially happy when I can get the entire family to enjoy the same dish!
My cooking tragedies
Pancakes -- always awful! I have never been able to make a decent yeast-based bread. I cannot make rice without a rice maker or I forget about it and it burns!

Amaretto Cheesecake I
My family loved this cheesecake, which I made for Easter dessert. This is only the second cheesecake I have ever made, and the instructions were easy to follow to make a successful dessert. The only adaptations that I will make the next time I make this is to double the crust (and perhaps use less sugar, as it was VERY sweet), and substitute some of the vanilla with almond extract to enhance the flavor of the amaretto. The vanilla flavor almost overpowered the flavor of the amaretto. Definitely a keeper of a recipe, and will be made again in this family! Thanks!

Sliced Tomatoes with Fresh Herb Dressing
This is a great way to enjoy tomatoes, and an easy side dish. It can be made with dried herbs as well (use 2 teaspoons each instead of 2 tablespoons) if you're short on fresh herbs. Sometimes I like to add red wine vinegar to taste to change it up a bit. Love it! Thank you!

Irish Chicken and Dumplings
I personally don't care for Chicken and Dumplings, but my kids wanted to try the dish. This recipe was easy to make, and the kids LOVED their meal. I will definitely be making it again, since it was something all of them could agree on! Thanks!
