My husband and I reside on a beautiful horse farm in Sullivan County, NY with our daughter (born 8/2009) and our stable of 30 Standardbred racehorses. We are currently working on resurrecting the old "farm house" into a comfortable country home - with one child and one on the way - we are working hard to make our house a "home." One of my rules for a happy house - homecooked meals every night!
My favorite things to cook
I love to travel and see new places, and while we can't always be on holiday, I enjoy "traveling" to distant shores through my cooking. Dishes from India, the United Kingdom, Mexico and the Caribbean are my favorites....but hearty meals from the American South and New England grace our dinner plates every week!
My favorite family cooking traditions
My grandmother always made sure I was involved in the preparations of meals, even when I was a little girl. In her "day" Home Economics classes were part of all young ladies' schooling - and they should still be! My family tree branches are rooted in Ireland, Britain, Scotland, Poland, Yugoslavia and Germany...and I love making traditional dishes from those wonderful places. My husband has a love for Mexican food - or anything spice filled - so I love trying new dishes from "spice lands" like Indian and the Islands.
My cooking triumphs
Changing my "meat & potatoes" husband who grew up in Montana into an "international foodie!" And proving that you can get your veggies and actually ENJOY them if you are creative enough.

Salsa Chicken
Very good quick meal. I rubbed the chicken breasts with a marinade of olive oil, crushed garlic and the taco seasoning and let it sit in the fridge for an hour prior to cooking and it came out great.

Roast Sticky Chicken-Rotisserie Style
This came out great - I seasoned the bird and left it in the fridge stuffed with onions for 24 hours. I did not however cook it at 250 - more like 325 at a shortened amount of time. I covered it with foil for the first half and then uncovered it to crisp up the skin - came out super moist, wrapped in a crisp, well seasoned skin.

Spanish Rice II
My husband usually leaves half of his rice on his plate, but when I made this he ate it all and asked for a second helping of just the rice! I had to add a tiny bit more water towards the end of the cooking time, but it fluffed up nice in the end. Thank you!
