Slow Cooker Buffalo Chicken Sandwiches

This was so simple it was almost silly that it was a recipe! I figured it would just be "ok", but it was EXCELLENT! I used 2 thighs and 2 breasts, because that's what I had. I don't normally like thighs but they work better in the crockpot. I plopped the frozen chicken in the pot and sprinkled the ranch dressing over the top, then topped with the hot sauce. I didn't read the instructions and I put the butter in as well. When I got home, the sauce kind of separated. I shredded the chicken and then mixed it together and let the chicken soak up the sauce a little bit. We had them on kaiser rolls with bleu cheese dressing as a mayo. They were so delicious! Even warmed up the next day for lunch they were great. Really simple and easy and perfect!! Thanks!

Reuben Burgers

I thought this was good! We had burgers to have for dinner but I didn't want just a regular burger, so I googled around and found this. I like reubens so I figured, why not? I had swiss at home, and the ingredients for thousand island dressing, so I just had to buy sauerkraut. FYI, I couldn't find it easily at the grocery store, it's in the canned vegetable aisle! I saw the review that the sauerkraut stuffed burger made it taste funny, so I just topped it with sauerkraut and it was really good!! Glad I tried it :)

Sue's Hot Fudge Sauce

Ohh. Emm. Gee!My husband has a serious sweet tooth, and I normally make hot fudge with sweetened condensed milk and some type of baking chocolate or chocolate chips, but didn't have either. I had plenty of evaporated milk and cocoa powder so I googled and found this recipe. I can not believe how delish it was!! We had it on ice cream and then I put it in a container to keep in the fridge and there was a little bit too much sauce to fit in the container, so I ate it. It tasted like melted, warm brownie batter. I did only use 2 cups of sugar and 1 stick of butter (rather than 3 cups and 2 sticks), and I thought it tasted sweet enough. The 3 cups and 1 cup scared me!! lol. I let it boil for awhile (by accident actually, got sucked into Teen Mom), and it thickened really nicely. I didn't blend it because our 5 month old had just fallen asleep and I didn't want to wake her. Probably could have used the blending, but it was fine without it!!!! Thanks Lisa/Sue!

Easy Pumpkin Muffins

Oh emm gee!! I love pumpkin muffins from the coffee shop , but they're so expensive, fattening, and not available all year long. I happened to have all these inegredients, so I made them. Instead of all the spices, I used a tablespoon of pumpkin pie spice. I also topped them with brown sugar like another reviewer recommended. I thought the batter was too thick and was going to add an egg, but decided not to. They came out FABULOUS! So moist and chewy. I love the spice. And the brown sugar didn't melt like I thought it would, so it stayed a little crunchy. I'm definitely going to make these again and I think next time I'll make a crumb topping with flour, oatmeal, brown sugar and butter. So so easy and so delicious :)

Potato Latkes I

These were good! I have a ton of potatoes from our CSA and wanted to do something other than mashed or baked potatoes. Like other reviewers had said, I used one egg. I also used some kole rabe whcih gave it a little bit of a peppery note. I used garlic powder and pepper also. Very good!!

Best Ever Sausage with Peppers, Onions, and Beer!

This was great!! I had all the ingredients on hand. I did not cut up the sausages into slices and we had sausage sandwiches. Tastes like outside of Fenway! Next time I will try like another reviewer mentioned and cook them in the crockpot. I'm happy to have another sausage recipe, and one that isn't over pasta!!

Turkey Burger Pie

This was really great! I had taken ground turkey out of the freezer to make something else, but when I went to make the other recipe, one of the ingredients had gone bad. I hadn't been to the grocery store so I needed a recipe that I had the ingredients for AND was easy since we have a newborn! I heated up some frozen onions before I browned the meat, and then used a package of mixed frozen vegetables so we had some vegetables in it as well. Also used some chili powder, hot sauce, worcestershire, garlic powder, oregano, and onion powder, and used pepper jack cheese. I assembled it during the day and baked it when we were hungry. Really good and fast one dish meal!!

German Apple Pancake

Made this today for our Easter brunch. I had to transport it so I cooked the apples and put them in a 13x9, and then made the bater and kept it seperate until it was time to cook it. I think next time I'll cut the sugar even more, becasue we serve it with maple syrup so it became a little too sweet. I did double the recipe as we had 6 people. But overall itwas really good and I will make it again!

This was good. The first bite was really good, nice flavor, but as I went on it seemed like the flavor left. I liked how it was easy, barely any clean up. I didn't do the peas but if I do try it again I will try it.

Sage Pork Chops

*Update* I make these ALL THE TIME. It's so simple. I just put the sage, some salt, pepper, and minced garlic in a bowl and then spread it on top of the chops. I grill them and they're SO GOOD! This was really great!! My husband said it was the best seasoning he's had on a pork chop. I used 2 thin pork chops with the bone. I added some garlic powder to the salt, sage, and pepper. Instead of using a boullion (I didn't have any), I used 1 cup of low sodium beef stock. My chops were very thin so I only had to cook them for about 20 minutes. They were so tender and moist, I really enjoyed them. Next time I might thicken the sauce up with some cornstarch for a nice gravy over the top. Thanks for the great, simple recipe!!

Turkey and Quinoa Meatloaf

This was very good! I used a little more than a table spoon of hot sauce but I didn't really taste it. I used carrot, onion and a few mushrooms, processed in the food processor and then sauteed in some evoo and salt and pepper and then tossed in a diced zucchini. And then I just mixed together all of the ingredients and let it stay in the fridge overnight. My husband baked it when he got home from work and it was ready for when I got home!! Very good!

Chicken Pot Pie IV

This was great! So easy too. I dumped in a can of corn, a can of carrots, a couple parboiled potatoes, a can of cream of celery, 1/2 a can of milk, some salt and pepper and garlic powder and poultry seasoning and a cooked, shredded chicken breast into a bowl and mixed it all up. I used store bought pie crust, put one on the bottom of a 9 inch pan, and then poured the filling in and put the top crust on and sealed the edges, and cut a couple steam holes out. Then I coverded it in foil and froze it. 2 days later, I baked it at 350 for an hour and a half ish, and it was ready. It was delish :)

Chicken Breasts with Balsamic Vinegar and Garlic

This was great! I used canned mushrooms because that's what. I had but I folllowed the rest of the recipe exactly. We had it over egg noodles. I was going to have it over rice but didnt want to wait 45 minutes for the rice. It was really good! I will definitely make this again.

Butternut Squash with Onions and Pecans

This was really good. I made modifications based on people's reviews. I microwaved the squash for about 7 minutes to make it easier to cut. I added dried cranberries and simmered everything in apple cider. I also added corriander, cinnamon, and all spice. I made it in the morning before i went to work, and put it in a casserole dish so my husband could throw it in the oven to heat it up. The only thing i didn't' like was the parsley, it tasted like soap but that's probably my own tastes.

Brazilian Chicken with Coconut Milk

This was really good. Nice way to change things up from the munndane chicken to something very flavorful and different. My husband said it tasted like a taco. I used canned dieced tomatoes, and canned diced green chiles. I liet the chicken simmer in the sauce for about 20 minutes . I served it with brown rice and fried plantains. Very tasty! I just wish it had more of a coconut flavor, but everything I've ever made with coconut milk doesn'tactually taste like coconuts so I didn't deduct from that. I think next time I will try basil instead of parsley as a reviewer had mentioned. Great recipe!!

Doggie Birthday Cake

We had a family party and 4 dogs were there, all but one had a birthday right around our party. I made these birthday cakes for the dogs and they LOVED them. I added a little bit of cinnamon and a small amount of salt to the dry ingredients. When I was mixing the wet into the dry, it was too dry (I didn't reallly measure the PB so that might be why), so I added some chicken broth that I had. I did use the honey. I baked them in small aluminum pie pans that are for chicken pot pies. They were perfectly baked in the 40 minutes. My husband decided to try a piece to see what it tasted like and he really liked it. He kept feeding one piece to the dog and one piece to himself hahahaha. I will definitely make this in the future for the pups!!
