Chef John's Stuffed Summer Squash
If you're using yellow summer squash like in the picture, you'll need to make the following adjustments. I cooked three medium yellow squash, and I needed twice the amount of filling the original recipe calls for. Also, the squash needed to bake for about an hour. I put foil over it for second half of the baking time so the filling wouldn't burn. Like other reviewers, I used hot italian sausage. I also brushed olive oil over the squash and seasoned liberally with salt and pepper before adding the filling. Then I put a few pats of butter over the top of the bread crumbs. It came out very tasty!

Coconut Shrimp I
Wow! This was fantastic. I put the shrimp in the freezer for 15 minutes, and the coating stuck just fine. I forgot to get the ingredients for a dipping sauce, so I wound up mixing 1/3 cup pear jam, 2 Tbs coconut milk, and 2 tsp whole grain mustard - sounds bizarre, but it tasted great!

Stuffed Pork Chops I
I didn't exactly follow this recipe - I used stuffing mix, and added in some scoops of apple butter along with the chicken broth. After browning the pork chops on both sides, I sliced them open in the pan and put the stuffing inside. Then I baked them at 400 for 10 minutes (probably 6-7 minutes would have been plenty). It was AMAZING - the apple butter made it over the top. Next time, I'll add some chopped up apples, too!
