Confetti Bean Salad

Reviewed: Mar. 26, 2007
I made this for my son's first birthday party and at least 12 people asked for the recipe. It was easy and so very flavorful. I wouldn't change a thing, but you can certainly play with ingredients and flavors to make it more your own. Great recipe!

Cavatappi with Spinach, Garbanzo Beans, and Feta

Reviewed: Jun. 23, 2005
This is a wonderful recipe! I used the new Barilla Plus multi-grain enriched penne pasta as my store didn't have cavatappi. It worked very well. The only change I made to this recipe was to add the salt, pepper, and garlic to the lemon juice and then whisk the ingredients constantly while drizzling in the oil to make a nice, emulsified vinaigrette. Then I rinsed the garbanzo beans, tossed them in the vinaigrette with the chopped spinach and feta and let that sit to "marinate" while the pasta cooked. Not a huge change, but I think it helped the ingredients come together a little better than just tossing it all in a bowl and stirring would have. My husband and I both feel this would also do very well as a cold side salad. I also think it would tolerate the addition of fresh herbs of you have them on hand, such as dill or basil. This is definitely a recipe we will make again and again!

I have used thi recipe for years now and still love it every time we make it. I have used both turkey and regular bacon and both are wonderful.

Applesauce Bars

Reviewed: Oct. 16, 2003
I had a bunch of McIntosh apples I had to process into applesauce before they went bad. This was a great way to use the applesauce in baking! I made muffins instead of bars (400 degrees for 15 minutes) and they were very moist and flavorful. The people in my office really enjoyed them. Next time I plan on adding dried fruits and nuts to make them a little heartier. I might even top them with a streusel topping for a twist. This is a wonderful base recipe that can really be catered to individual tastes. If you are looking to use up some applesauce or have a tasty harvest treat I strongly reccomend you give this recipe a try. It is very quick and simple and the results are delicious.
