Apricot Chicken I
This was good; it reminded me of sweet & sour chicken. I didn't have onion soup mix, so I used Leek soup mix by Knorr. It added a mild onion flavor. Used Kraft Russian. Also, I didn't have time to cook the day I put it together, so it marinaded overnight. I don't know if that enhanced it or not...I just know it was yummy. Served it with brown rice and steamed broccoli. May try the Sugar-Free or ALL-fruit next time to be healthier.

Kielbasa Stew
We're not big cabbage eaters but when I bought a giant bag of cole slaw from Costco, I needed to use it up! My husband requests this and my picky 13 year old likes it too! Us girls like it with sour cream, my husband without. I use turkey sausage just to cut the fat content. Great for chilly fall weather!

Easy Pumpkin Muffins
These were incredibly easy and delicious, likd by all ages. I made them into 4 dozen mini-muffins, cooking 15 minutes. Also instead of all the different spices, I just used 1 teaspoon of pumpkin pie spice. I like pumpkin, but don't love it, so I appreciated the mildness of it. My husband who doesn't even like pumpkin liked these! I plan on experimenting with different cake mixes, adding white chocolate chips, or maybe spreading with cream cheese. My daugher wanted them with ice cream! :)They are good hot or cold. These would be good to send in lunchboxes or take to brunch or as a gift to someone sick.
