About this Cook
I am half Puerto Rican and half East Indian, married to an All American blonde haired blue-eyed boy :) meaning the food around here is pretty international! My husband and I both grew up in TX, so that also is a large influence on what we like to make. With 3 kids, cooking is an adventure :) we like to try new things, and I try to make things that are simple but still flavorful. We like flavor a lot. Most things I make require minimum steps with maximum results, but then again, there are times when it's ok if things are little more involved. Just because there's a few more steps doesn't necessarily mean it's difficult. So, that's about it. I like food. I love my family. And being hispanic, food is the way we show love for one another. My cooking tragedies
When I was 20 and pregnant with my second child, we lived in a small apartment with no dishwasher. We were having company for dinner, so I decided I'd make my pork roast in a disposable pan instead of a regular roasting pan to cut down on dishes. While stabbing at my roast, I poked a few holes in the bottom of my pan. "I know," I thought, "I'll just like the bottom with foil and it'll be fine!" So that's what I did. Yeah, that didn't work. Grease from the roast leaked all along the bottom of my oven. Worst part is that I forgot to clean it up after so the next time I baked something there was a huge inferno! LoL it really was funny once I put the fire out :P

J.P.'s Big Daddy Biscuits
These biscuits are the BEST... with some minor alterations lol ;) I replace the shortening with COLD butter,the milk with either buttermilk or evaporated milk, and DO NOT KNEAD THE DOUGH. Just lightly pat it into a square shape, and cut out SQUARE biscuits, thus eliminating having to reroll and getting a tough batch. The least amount of handling, the better. Thank you SO much for sharing this recipe, JP! It's a family favorite around here, and a frequent flier on our menu :)

Hoot Owl Cookies
I am a Harry Potter FaNATic and tonight is the premiere of the last movie :) I made these for while we're waiting in line to munch on! Soooo good! Subbed some of the butter with peanut butter today :) i've made it both ways tho and both are very good!
