Juicy Roasted Chicken
I have made this twice and it is amazing. I use and herb butter mixture for the inside, under the skin on the breast and outside of the chicken. Also I use carrots, celery and onion for the stuffing on the inside. Its seriously the best roasted chicken I have ever had!

Italian Mashed Potatoes
I made these for dinner with some roast chicken and garlic rosemary green beans and they were such a hit I had to double the recipe so we could all eat a mountain of them. My husbands eyes lit up when he tried them and he said they were the best mashed potatoes he had ever eaten. Also I only had about half the spices and they were still delish.

Artichoke Stuffed Mushrooms
I made these twice already and plan on making more of them tomorrow. The times I have made them they didn't last more than a few minutes. The filling recipe is enough to make more than 24 if you use regular musrooms. This is my favorite mushroom recipe ever. I add bacon to the mixture and also sprinkle bacon on top. I would also recommend using more artichokes in the recipe and some shallots. Yum.
