Asian Chicken Salad

The dressing is delicious; my 10yr old didn't care for it, but my picky 12yr old loves it. I think it would make an excellent marinade, as well. I did add about a teaspoon of ground ginger to the dressing, and I hadn't realized that I was out of rice vinegar, so I used plain white. It was still great. My husband says it tastes just like a dressing from Wendys. As other reviewers, I added shredded carrot, thinly sliced white onions, and some leftover snow peas I had. I topped the salad with uncooked crushed ramen noodles. This was a very quick, easy dinner that is perfectly suited to using up leftover chicken, seafood, and veggies. I will definitely be making this again.

Merritt's Butternut Squash Gratin

Great recipe! My kids (9 & 11) liked it, but requested less crumb topping next time. I agree that fresh herbs are unnecessary; there is so much flavour going on in this dish already, I'll use dried next time. The cheese is expensive, and we are certainly not wealthy, lol, but we felt this was a worthwhile expense (most "fancy" cheese is, in our household). This recipe has made it into my monthly rotation :)

Fast and Friendly Meatballs

These go together very fast, and they taste good. The turkey brings a much different texture, which was a nice change, however not a total replacement for traditional meatballs (in my family, at least). I've made them several times, and my family enjoys them. I now add garlic, and other seasonings to suit my family's tastes, but just as written, they are moist, and my go-to quick meatball recipe.

Chicken Enchiladas II

This didn't taste BAD, but I really wish I had read the reviews before making. The sauce needs to be doubled & thinned with more milk or stock/broth, more chicken needs to be added (or some other filler; corn, beans, bell peppers, etc), and I would definitely recommend smaller tortillas. I added extra chicken, and still barely had enough filling for 4 tortillas. I doubled the milk, and still didn't quite have enough sauce to cover the enchiladas. Sauce should be put under the enchiladas; the tortillas were very tough on the bottom. The mushroom flavour was almost overpowering. To compensate, we added fresh cilantro to the sauce, and topped with fresh avocado, & salsa. It was alright. I could see this being a good dish to cook for picky kids. Fairly mild as written.

Chicken Shepherd's Pie

My family & I loved this. I actually forgot to add any seasoning (salt, pepper, rosemary, & thyme), and it was still delicious. I added fresh mushrooms, and frozen peas, just because I had them. The potatoes were quite runny; I will decrease the liquid in the potatoes next time. We all agreed that it would be just as good without chicken, as well (side dish, or Meatless Mondays!). I will definitely be making this again. It was tasty, colourful, and my kids ate their veggies happily :)

Simple Hamburger Stroganoff

I love this recipe; my whole family will eat it without complaining! That makes it magic right there, but I also like that it is quick & simple, doesn't dirty a kitchen-full of dishes, and it uses things that I almost always have on hand-plus it tastes great. I frequently add things to the recipe, depending on what I have around. My favorite is to add peas, and/or corn. Recently, I served it over refrigerator biscuits instead of pasta, & it was just as great. I have even subbed out the ground beef for sliced deli roast beef, and it was wonderful =] Thank you for this recipe!

Split Pea Soup

This tastes exactly as I expected - just like mom's =] However, my mom always used bacon instead of the hambone, and now I know why. It was tricky to get all the meat off, and it kinda grossed me out a little. This recipe is a perfect basic, comfort-food split pea soup, but I'll use bacon in the future, just to keep it simple =]

Spam Musubi

These have become a regular feature in our family, but I personally don't find that the sauce is entirely necessary. Everyone in my family likes them with something different anyway; my kids like to eat them with sweet & sour sauce, but I prefer them with soy & wasabi, & my husband just eats them plain (he'd eat them raw if I'd let him ;) My husband was stationed in HI for a long time, Spam musubi was his favorite snack - he was pretty floored when he came home to find that I had learned to make them for him. He says these are great, but that his favorite in HI were from the gas stations & movie theaters, where the "Spam juices" soak into the rice after they'd sit under a heat lamp for a while.

Polish Chicken and Dumplings

I thought it was a TINY bit on the bland side, but, obviously, seasoning is all a matter of preference. I just added a litle bit of celery salt, and it was perfect:o)
