Banana Bran Muffins

Pretty good bran muffin. Subbed applesauce for the oil per other reviews. My brown sugar was too old to use so I had to use all regular (organic cane) sugar. Only giving it 4 stars b/c I feel like it needs something else. Maybe some chopped apples or raisins or something. Will make again.

The Best Vegetarian Chili in the World

Made this for the second time. Didn't rate it the first time b/c I accidentally purchased crushed tomatoes with basil and it completely ruined an entire pot of chili. This time, it was delicious! Made just a few changes. Omitted the 2nd green pepper, the meatless crumbles, the can of corn and the cumin. Used one can of regular chili peppers and one can of hot chili peppers. This was pretty spicy. I had to add a big dollop of sour cream to my bowl to tone it down a notch. Husband loves spicy so he thought it was perfect. I didn't make it on the stove but put it in the crock pot on LOW for 6 hours. It was probably up there with the best chili ever. Don't think the meat crumbles are necessary at all. It's still very hearty and filling without them.

Campbell's Kitchen Tuna Noodle Casserole

Added half a can of drained mushrooms and about a half cup of chopped onion. Omitted the bread topping. Was okay. Needed more seasoning. Husband liked it and it was easy so I will probably make again.

Restaurant-Style Hashbrown Casserole

This is so good. I omit the butter completely and just use two cups of sour cream. I also you cheddar-jack cheese instead of just cheddar. I slice the onion really thin so it just blends right in with the hashbrowns. Delish!!

Waffles I

These were pretty good. Definitely light and fluffy but they could have used more flavor. I added a bit more vanilla and they were still pretty bland. I think these would be great with some blueberries added to the batter.

BBQ Pork for Sandwiches

This was so delicious! Made a couple easy changes: I used pork tenderloin and it was fantastic. I seasoned it with montreal steak seasoning and seared it for a couple minutes on each side. Put in the crock pot with the can of beef broth and about half of an onion (sliced however you like). It was ready to shred after 4 hours on high. I dumped the onions out with the used broth. Then I dumped a bottle of Sweet Baby Rays on it, put it back in the crock pot on low for an hour and bam, ready to go. We like to add a little Famous Dave's "Devil's Spit" sauce on each individual sandwich. My husband thinks this is even better the next day after it's been in the fridge. Make it with some baked beans and potato salad and it's a great BBQ meal!
