Boston Cream Pie Minis

I've been searching for years for a simple Boston Cream Pie recipe and this is it! I made them for my husband's office and his co-workers about had heart attacks when they saw them. Easy and delicious! I did only make 12 cupcakes and had just about enough filling and chocolate for a nice amount. After they had chilled in the fridge long enough for the chocolate to harden a bit I topped each with a dollop of whipped cream and a cherry. Yum!

Hamburger Vegetable Soup

Pretty good soup! Especially on this cold, rainy day. I made a few changes based on what I had on hand: I did not include an onion (although it would have been good with one). I had no frozen veggies, just canned, so I put in a can of sliced carrots, a can of french cut green beans, and a can of corn. I also added garlic, salt and pepper to the beef while browning and the soup itself while it was simmering. I used 2 cups of macaroni instead of 3/4 cup. It was good and easy to make and it was done so fast we were actually waiting on the biscuits to be able to eat. :)

Crab Rangoon III

DELICIOUS!!! I made these for a party and they were the hit of the party! While I was cooking them my toddler ate about 7 himself! Changes I made: I used two packages of cream cheese and imitation crab meat from the butcher. I had the fire very low to fry them and that kept the filling from escaping. Also make sure to press the wrappers away from the filling as you close them to remove any trapped air, this will also help to keep filling from escaping during frying. I served them with sweet and sour dipping sauce. Very easy to make, just a little time consuming.

Amish Breakfast Casserole

I made this for my son's 6th grade Holiday Breakfast. The kids were skeptical when they saw it but after a few had tried it, the entire dish was gone in under 15 minutes. Kids were coming back for seconds and pouting that it was gone! I thought the cottage cheese/swiss combo sounded odd but I have to say it was amazingly delicious! Changes I made: I used breakfast sausage instead of bacon. I sautee'd the onion in the sausage grease afterwards. I used southern style frozen potatoes instead of hash browns. I also threw in an extra egg.

Valentino's Pizza Crust

This is an easy recipe and very good! Everyone in my family loved it-a rarity for sure. The crust was soft and very tasty. I doubled the recipe with no problems. I used generous amounts of olive oil on my fingers to spread the dough, as well as a thin layer on the pans. I sprinkled thyme, oregano and garlic powder before spreading sauce on the dough.

Basic Flaky Pie Crust

Best pie crust I've ever made!!! I used unsalted frozen butter instead of shortening. I know I used more than 3T of ice water but that is the way it is usually... This pie crust was literally better than the fillings I put in it. It was buttery and flaky but didn't fall apart on your plate. Everyone at Thanksgiving dinner raved over it. For those of you having issues rolling, I put my dough in the freezer while making filling. Then I rolled it between wax paper with liberal amounts of flour and had no issues with it falling apart or sticking. It didn't even fall apart while making a lattice-top pie, which I've had problems with in the past. Most importantly though, this was the best-tasting pie crust I've had. And I'm the type of person who usually doesn't even eat the crust.

Apple Pie I

Good basic recipe and very easy. I used Granny Smith apples and half white, half brown sugar. I also added a bit of nutmeg and brushed the top crust with egg/milk. It took nearly an hour for this to be done baking.

Pumpkin Bread

Amazing recipe! I made way too much for my family but when I tried to give some away my husband balked so we kept it all and none went to waste. I did not use cloves, as I had none but I increased the cinnamon to 2T. This recipe made a loaf and 12 cupcakes. The house smelled so delicious while it cooked. This is especially good sliced and heated up with butter with your morning coffee.

Golden Sweet Cornbread

Family loved this. I added a teeny bit more oil to make it more cake-like and less crumbly. This was my first time not using a mix and it was so easy I feel stupid for using mixes for so long, especially since it was so much yummier!

Creamy Baked Chicken

Great recipe and now in our regular rotation. :) I used boneless/skinless breasts and sub'd one cup chicken broth in place of the cream of chicken (didn't have any) and omitted the 1/2 c. water so it wouldn't be too runny. Served over white rice, it was delicious.
