Spicy Black Bean Empanadas

Reviewed: Dec. 22, 2010
Very tasty. I used some left over pastry dough from a pie I made rather than the sheets. The stuffing was delicious. I wish I would have made the circles larger though, that way I could put more inside each empanada.

Finnish Pulla

Reviewed: Dec. 22, 2010
Wow! This is remarkable. I had never tried Pulla before and now I'm hooked. It wouldn't be difficult to eat an entire loaf in one sitting. It took me a very long time due to the dough being slow to rise but it was well worth the effort. It turned out great. I used an egg wash with a little milk and sprinkled with sugar before I baked and after it came out I made a glaze of 1/4 c. sugar & 1/4 c. water heated on the stove and brushed the bread. Yummm!

Salmon Cakes III

Reviewed: Dec. 13, 2010
Delicious! I used plain dry breadcrumbs instead of fresh bread. I also fried the onion in some oil until translucent and tossed in some celery seed and parsley just before I took it off the heat. After frying until golden brown on each side I baked at 350 for about 20 minutes. I served them with a creamy dill sauce which was a perfect compliment to these patties.

Very easy to make & it was a huge hit with the in-laws who like everything chocolate for Thanksgiving breakfast.

Basic Crepes

Reviewed: Dec. 13, 2010
I wanted a sweeter crepe so I added powdered sugar and vanilla until it was to my liking. I also had to add more milk and water because the batter was too thick and pancake like. I put scrambled eggs with sausage and bacon in half and a sweet apple filling in the other. This was my first attempt at making crepes and overall it was pretty simple and after a few tweaks, delicious.

No Fail Pie Crust II

Reviewed: Dec. 13, 2010
Used this crust for a pot pie and it was wonderful. I didn't have enough all-purpose flour so I substituted with self-rising flour; omitting the baking powder and salt. It was perfect! I used my mixer for the flour and lard then used the dough hook once I added the liquid ingredients. I then chilled my dough ball for a few hours until I was ready to use. It was incredibly easy to work with and didn't tear. This will now be my go-to crust for just about everything.

Southwestern Spaghetti Squash

Reviewed: Oct. 12, 2010
I thought this was a bit bland. I even added jalapenos and made it extra spicy. It was good, don't get me wrong, just didn't have as much flavor as I was expecting.
