Sarah's Applesauce

Reviewed: Apr. 4, 2011
This is a great, great recipe! I didn't see this in any of the other reviews (maybe I didn't read back far enough) but it took me a while to peel, core, and chop the apples (will be investing in a better peeler, and a corer), so I used the juice of half a lime in the pan as well. I nixed the regular sugar and used 6 packets splenda (equal to 1/4 cup sugar) and 5 gala apples. It came out GREAT! A little too much water, but I drained a little off before I started mashing.

Asparagus Guacamole

Reviewed: Apr. 4, 2011
Just made this and it is pretty great. After reading the reviews, I did add 2 tbsp fat free cream cheese, and I also added 2 tbsp fat free mayo (we're on a diet). I think I should have added the cream cheese and fat free sour cream instead. We also added jalapenos for spice. I would say go heavy on the garlic, cilantro, and spice as it can be a little bland. It isn't like avacado guacamole, but we used it as a spread on a veggie sandwhich and it was quite similar!

Slow Cooker Ground Beef Barbecue

Reviewed: Apr. 10, 2011
I made this using vegetarian fake "beef" crumbles, and it was so delicious my fiance forgot it wasn't meat (we're on a low calorie diet)!! the only thing I changed was using a chipotle flavored ketchup as it was all we had. I think it would also be great with chicken or brisket! Thank you so much for sharing, we will be making this again!!

Slow Cooker Pozole

Reviewed: Apr. 11, 2011
I added a little extra water, and used only chicken but the recipe was pretty great for a slow cooker pozole! And to the "this is more like a soup" comment.... that would be because pozole IS a soup!! :)

Kid's Favorite Passover Pizza

Reviewed: Apr. 25, 2011
Yummo! I used thin unsalted matzo, and only used 1 tablespoon of organic pasta sauce per pizza. We didn't have any olives, so I sprinkled some feta cheese crumbles, and I also used vegetarian pepperoni. It was great!!! Can't wait to try more variations! Thanks for the ideas!!

Marshmallow Fondant

Reviewed: Sep. 27, 2011
I have used this recipe recently on several hello kitty face cakes, for friends. It is always met with "oohs and ahhs" for presentation, and the taste is DEFINITELY better than some store-bought icing or fondant. I brought one to work and was immediately propositioned to make more. It's really kind of fun to make too, but I think it would be a disaster with small children. I made a chocolate version by using some cocoa instead of entirely powdered sugar, and it was pretty good as well. I should add that I made this in TX, in the middle of the summer, with no problems. You definitely have to refridgerate it for at LEAST a few hours before using, and then let it thaw to slightly cooler than room temperature.

Slow Cooker Pulled Pork

Reviewed: Nov. 20, 2011
I just made this and it's amazing. The root beer gives it a very mild underlying sweet taste. I used a 4 lb pork roast, as opposed to tenderloin, and filled the root beer over the top of the roast. I cooked it on high for about 4 1/2-5 hours (as I didn't have 6 or 7). It was tender and succulent, and I had 0 problems with the root beer sticking to the crock pot. I pulled the roast out, drained the root beer, and shredded the pork. I then put the pork back in the crock pot, and smothered it in some homemade bbq sauce. delicious!!

Baked Sweet Potatoes

Reviewed: Apr. 13, 2012
I love this recipe. I have tried it as described here, with rosemary instead, with rosemary AND oregano, with a little extra chile powder (spicy + sweet!)... all are delicious! I usually use pam olive oil spray instead of olive oil, though.

Aunt Blanche's Blueberry Muffins

Reviewed: Jul. 15, 2012
These came out very dry and biscuit like. My fiance thought they were alright, split open w/ a huge pat of butter, but you shouldn't HAVE to do that with a muffin. I followed-the recipe to a T, but substituted egg beaters for the egg. I've never had a problem using them before, so I don't believe that's the issue. Next time I'd add some unsweetened apple sauce or something for moisture, but if you're looking for blueberry biscuits, then this is the recipe for you.

Tender Italian Baked Chicken

Reviewed: Dec. 6, 2012
I think the people who said it was soggy, or bland and dind't cook it enough must have used chicken breast that was too thick. I used very thin chicken breasts and followed the recipe. I used garlic salt instead of garlic powder, and Italian bread crumbs. It was cripsy, moist and delicious. I will probably try with mustard or italian dressing next time to save on the calories. It is delicious, but you should always taste the bread crumb mixture before you dip and cook the chicken... if it's bland then, guess what - it'll be bland cooked!!

Guava Barbeque Sauce

Reviewed: Jan. 8, 2013
Followed the recipe almost exactly - used ground ginger instead of fresh and sriraccha instead of the pepper which I didn't have. Delicious!! It is a bit sweet, but I prefer sweet BBQ sauce.
