Easiest Eggplant
I made this with a couple tablespoons of grated parmesan added to the breadcrumbs, then topped with canned spagetti sauce and mozzarella cheese. Fifteen minutes in the oven produced some great eggplant parmesan. So much less fattening than frying the eggplant.

Triple Dipped Fried Chicken
I followed the recipe proportions and used water, not beer. Like some other reviewers I found the chicken not spicy at all but it was crisp and the batter kept the boneless breast tenders moist. I'll make this again, but next time will add much more spice, maybe Chef Paul's cajun seasoning blend.

Aaron's Missouri Burger
I was skeptical when first reading the ingredients but the rave reviews convinced me to try them. These are my new favorite burger! Prepared the exact recipe early in the a.m. and let the mixture sit in the refriderator 12 hours. No olive oil, just a good spray with PAM in a cast iron skillet and the burgers cooked perfectly, no falling apart. Great with the Swiss cheese and a King's Hawiian bun.
