Lentil Soup
Terrific with changes that others suggested. Double the spices, use 4 cups broth, 4 cups water. I added a little sherry early on, balsamic vinegar and spinach towards the end. I used a large can of blended tomatoes instead of the 15 oz can. Also, I cut up some smoked turkey sausage early on, which added nice flavor. Will definitely make again! Delicious! And healthy!

Smokin' Scovilles Turkey Chili
I use jalapeño instead of habanero because I'm a big chicken. But this chili is my favorite! I love to add other spices like nutmeg and ground cloves, and let all the spices cook a little with the meat and vegetables, before adding the liquids and tomatoes. I've made it quite a few times this winter, as we have had so much snow. Great recipe for hibernating by a cozy fire.

Quinoa Chili
This is delicious. I messed with it a bit though. I used the juice in each can of ingredients as many reported it to be too dry as written. Also, I used canned corn with the juice. I cooked the quinoa in natural beef broth and added a lot more beef broth and a little water to the mix while it was cooking. I threw in some garlic powder, salt and pepper toward the end as the flavors can cook off. I cooked it a little longer than required, as that helps the flavors meld better. Eating it next day for lunch at work as I write this! Next time, I think I will cook the onion, garlic and spices in the large pot and add the meat to it for deeper flavor.
