Southern Pimento Cheese

Delicious and easy! I followed the recipe EXACTLY the first time (minus the optional jalapeno). Next time I will likely add a little more cayenne or maybe a dab of mustard. But this recipe deserves 5 stars.

Banana Coconut Pecan Muffins

Delicious, most muffins. I used Red Mill unsweetened coconut flakes. They did get stuck in the muffin papers though and fell apart. My tip is to spray them with cooking spray.

Best Chocolate Chip Cookies

Best cookies ever. Everyone LOVES this recipe. I do use margarine instead of butter. If your cookies are flat, buy new baking soda. Also, add 2 TBS rum or cognac for a festive holiday cookie with a spice flavor.

Key West Chicken

Easy, delicious, a definite crowd-pleaser. I followed the recipe exactly. I did cut the chicken breasts in half so they'd cook through better on the stovetop, and poured all the extra marinade into the pan. That might have upped the flavor compared to a larger piece on a grill.

Lime-Marinated Mahi Mahi

Quick, simple, delicious! I took the advice of other reviewers and upped the lime by 1 TBS and decreased the olive oil a little. The recipe doesn't specify whether to leave skin on or off, so I removed it and it came out perfect. I'm not a huge fan of fish most of the time but I liked this recipe.

Broiled Lobster Tails

Yum, yum, yum! Easy, tasty, and doesn't overwhelm the sweet lobster flavor. I cooked my smallish lobster tails for 8 minutes on normal broil, center rack, to get the firmness I desired. A pair of kitchen shears came in handy to cut the shells.

Sesame Seared Tuna

This tuna tasted 5 stars, but the searing made it smoke a lot and scorched the sesame seeds so I gave it 4. I would advise adding sesame seeds after cooking. I didn't have mirin so I skipped it, and I also used apple cider vinegar instead of rice wine vinegar. Yummy :)

Juicy Roasted Chicken

Yummy, tasty roasted chicken recipe. I didn't have any celery so I used a slice of onion inside, and I basted with 1 TBS more margarine halfway through. I also made sure to lift the skin and put butter and spice mix underneath. It also took 20 minutes more to cook. Delicious!

Portuguese Burnt Sugar Candy

This candy is just what Laura Ingalls Wilder made in her one of her "Little House on the Prairie" books (the big woods one, I think). Only she dropped it into snow banks and used maple sugar. Cool historical recipe :)

Crusty French Bread

This bread is delicious. I tend to add 1 TBS more water, 1/2 tbs LESS sugar, and knead for 8-10 minutes. When it comes time to bake, use scissors instead of a knife to make tiny snips that look like a "v." One of the photos on the recipe shows the result. I always have to cook for about 30 minutes too, since I make a wider loaf. I also skip the egg part. Very tasty bread with a crunchy crust on the bottom. Yum!

Out of this World Turkey Brine

This recipe is much tastier than the other one I have tried. I add a bouillon cube to the brine. When you cook the chicken after brining, it is faster, so cook as if it is 1/2 lb smaller or so of a bird. Rinse after brining, then peel the skin up a bit to slide in fresh rosemary and pats of butter. Then use a lemon pepper on the skin. Delish!

I love this marinade :) I used the stone ground mustard with the seeds in it as I did not have Dijon. I also omitted salt (which I do for all recipes.) Otherwise I followed it perfectly. I used half for some lamb kabobs and the other half as a steak marinade for a sirloin. I loved it! It covered up the kind of harsh taste you can get in lamb. I cooked both on the grill over medium high heat and had minimum charring even though there is high sugar content. Thank you!
