Manicotti

Reviewed: Jan. 6, 2002
This is a very good recipe. I used a bit more spaghetti sauce and added mozarella on top of the sauce. All that I had on hand to stuff with was a slim plastic knife, which worked pretty well. First stuff one side, then turn and stuff the other.

Garlic and Onion Burgers

Reviewed: Feb. 11, 2002
I really wanted to like this recipe, and I can see that it does appeal to many people. However, I found it to be quite unappealing. I wound up wasting a couple of pounds of ground round, because no one could finish his burger.

Citrus Scallops II

Reviewed: Jul. 11, 2005
This sauce was delicious. I substituted red peppers for green due to personal preference. I found myself taking extra helpings of sauce and dipping my bread in it!

Potato Chips

Reviewed: Apr. 11, 2008
I would not try this recipe unless you have a food slicer and can slice in uniform sizes. I just used a knife and the chips varied from petrified to raw potatoes. I don't think there was more than 1/8th of an inche difference from smallest to largest.

The Whole Jar of Peanut Butter Cookies

Reviewed: Apr. 28, 2009
I'm glad I wasn't deterred by a few of the negative reviews, these were good. My only advice would be to mix the ingredients thoroughly and do not forget to refrigerate for at least two hours to perhaps avoid some of the negative results that are reported. I added semi sweet chocolate chips - very good.

Turkey Soup with Slickers

Reviewed: Apr. 30, 2009
This is a great recipe and very flexible. I used a chicken carcass instead of turkey, and used brown rice instead of making slickers and it was still outstanding. I found it helpful to know that 5 quarts is 20 cups. My crockpot only holds about 3 quarts of water with all of the other ingredients, which was more than enough water. Outstanding recipe!

Party Lemonade

Reviewed: Jun. 6, 2009
This is great. I tried it as is. I tried it using Splenda instead of sugar. I tried it using limes for limeade. All were good. I used a small whisk to mash up the fruit. I thought it was a good idea to wash the fruit before slicing it, since the peel remains in the mixture.

Flourless Oatmeal Blueberry Pancakes

Reviewed: Jan. 26, 2013
I was looking for some recipes using coconut oil, since it is so healthy, and I'm so glad that I found this one. These pancakes are delicious, much better than traditional pancakes. Here are some of the reviewer suggestions that I either followed or did not follow, along with my own advice. I did grind the oats in the blender before using them, but I did not double the amount, as one reviewer did. I measured the two cups before grinding, and used the proceeds. To melt the oil, I took a heaping amount of oil on a serving spoon, put it in a glass measuring cup and microwaved for a little under a minute. The liquid amount was a little bit less than a quarter cup so I added a bit more coconut oil and it melted on its own, without additional microwaving. I did not want to miss out on all of the nutritional benefits of egg yolks, so I used two whole eggs. I mixed the blueberries into the batter, some of them popped out when cooking, and some stayed in. The oil that I used in the pan was coconut oil. These pancakes are just loaded with healthy ingredients, taste great and are so satisfying with a relatively small portion. I did put a small amount of maple syrup on them, but hardly any is needed, for my taste.

Mexican Casserole

Reviewed: Jan. 4, 2014
This is the best recipe I have ever used from this site. Don't feel that you must use all of the suggested changes. I used the chili powder (not taco powder) and I did not reduce the amount of cheese, and it was great. I did use flour tortillas, and refried beans instead of ranch beans. Unlike lasagna, this cuts into nice solid pieces, without the ingredients running all over the place. It's just a fantastic recipe.
