Raspberry and Almond Shortbread Thumbprints

I followed MarciJ's recommendations but my dough wouldn't come together. I ended up adding 3T of milk and then it did. Otherwise the revisions worked perfectly. Of note, I used a cookie scoop and only got 18 cookies. These were delectable and we'll definitely make them again.

Grain and Nut Whole Wheat Pancakes

These were met with rave reviews in this house. As recommended by others, I added 1/2c wheat germ, used 2 eggs and used 1/2c apple sauce instead of the oil.

Baked Ziti II

We thought this was very good. My 9-year-old loved it. I added 1/2 t of garlic powder and 1t of Italian seasoning. I also browned a pound of green pepper and onion sausage and added it in. I was short about 5 oz of sauce but thought there was still plenty. I did reserve a good 1/2 to 3/4 of a cup of the mozzarella and put it on top for the last 15 minutes. I then gave it a quick blast under the broiler to brown the cheese. Oh, and I forgot the parm so I added that on later. We'll definitely make it again. There is no such thing as "too cheesy" in this house!

Spinach Bars

This was really good. I used one small onion, 1/4t of garlic powder for the garlic, 2c of 2% sharp cheddar and 2c of Cabot 75% reduced fat cheddar. I omitted the mushrooms as I didn't have them. I mixed up everything but the baking powder the night before, however, I forgot to add in the powder the next morning. They still were great. We'll definitely make this again. My 3-year-old gobbled them up. My 9-year-old didn't but I think that was just because he thought I was trying to trick him into eating spinach. Uh, yeah!!!

Barbequed Marinated Flank Steak

We really, really enjoyed this. I marinated in a bag for 24 hours. The flank steak was very tender. My son who doesn't like steak said "I don't like steak, mom, but I love this!" We'll definitely make this again!

Oatmeal and Wheat Flour Blueberry Pancakes

I'd make these again. I used all whole wheat pastry flour (no white). I also added 1t of vanilla, a couple of shakes of cinnamon and a little nutmeg. They were very light in texture but four made me stuffed!

Incredibly Cheesy Turkey Meatloaf

This was good. We would definitely make it again. I scaled it to 4 or 5 to fit the 20oz package that ground turkey comes in. We shredded the cheese and our favorite part was the crusty pieces around the edges. Oh and I threw in a big jar of carrot baby food with 1/2 a packet of onion soup mix. The BBQ sauce on the top was a big hit with the kids. The color was unappealing (esp with the baby food!) but the kids found it fun to squish in a sandwich the next day.

Shrimp Scampi Bake

We enjoyed this. I used 1t of garlic powder instead of fresh garlic. I added 1t of Old Bay and 3/4c of white wine. I marinated the shrimp for about an hour in everything but the butter. I added the marinated shrimp and the marinade to the butter in a casserole dish and cooked it for 5 then stirred. I repeated that twice for a total of 15 minutes and the shrimp was cooked perfectly. We had it on brown rice with steamed asparagus and dusted it with parm.

Pineapple Sirloin Skewers

This was very good. The reserved sauce was a little grainy but I didn't warm it up which probably would have resolved some of that. We had it over Jasmine rice and they were nice together. We'll def. make this again

Easy Chicken Satay

We liked this a lot. I'd give it 4.5 stars if we could. We did not think it was as peanut buttery as others thought. There was definitely a PB taste, however, the curry was also strong too. For those that like things hotter, some crushed red pepper would be a great addition. Oh, and I didn't grill the meat due to the weather. I just put it in a pan with a little olive oil and whatever marinade that didn't strain off. It didn't brown (due to the liquid) but it was great. We'll make this again but with some tweaking. Maybe some ginger and/or sesame oil?

Dark Chocolate Cake I

This was a very good chocolate cake. I made cupcakes with it (30) as there was a child in my son's class that was allergic to peanuts. I'll use this recipe again for the same reason but otherwise will just use a box.

Spinach Tomato Tortellini

We used a whole "brick" of frozen spinach. I just threw it in with the tomatoes and let it defrost while the tomatoes came up to temp. My kids ate the spinach with very little comment which is great! All-in-all it was a good dish and quick which means we'll likely make it again. It is a simple dish with very mild flavoring - don't be afraid to experiment to jazz it up a bit.

Burgundy Pork Tenderloin

5 stars for ease of preparation and a really good taste! I seared the meat first and then used 2c port (gotta use port!) and 2c beef broth. I also threw in 2 small cans of mushrooms (fresh would be delightful!) In 40 minutes it was moist and flavorful and you could cut the meat with a butter knife. We'll definitely make this again (and again, and again, and again)

Easy Slow Cooker French Dip

This was really good - especially for being sooooo simple! I added in 1/2t onion powder, 1/2t garlic powder, a good shake of pepper, and 1T of worcestershire. We'll definitely be making this again!

We used a flavored sausage (green pepper and onion) and I added 1/4 teaspoon sage. We also subbed Montery Jack for some more flavor. It was good but probably not something I'd make again.
